We start by washing and carefully preparing the meat. Choose a piece of beef or pork, depending on your preference, and cut it into small pieces, about 3-4 centimeters, so that it cooks evenly. This will ensure a tender and juicy texture. We continue with the vegetables: we peel and wash the onion, carrots, mushrooms, and garlic well. The onion is chopped finely, and the carrots can be sliced into thin rounds for faster cooking. The garlic is cut lengthwise, which will allow its intense flavors to be released into the dish.

In a large pot, similar to a cauldron, we add a few tablespoons of olive oil, which will not only provide a pleasant taste but will also help in cooking the vegetables. We place the meat in the heated pot and add the chopped vegetables. It is important to sauté them over medium heat, stirring occasionally, until the onion becomes translucent and the meat starts to change color. At this point, we add vegetable broth, which will enrich the dish with deep flavors. We cover the pot with a lid and let it simmer on low heat, allowing the ingredients to combine and develop the taste.

During cooking, it may be necessary to add a little water, depending on how much liquid evaporates. When the meat is cooked, meaning it becomes tender and easily falls apart, we add the peeled, finely chopped tomatoes. They will soften quickly and form a delicious sauce that will bind all the ingredients together. We mix well to ensure the tomatoes are evenly distributed and let it cook until the sauce becomes thick and flavorful.

To serve this dish, we recommend a portion of warm polenta, which will perfectly complement the taste of the meat and vegetables. Polenta adds a note of comfort and tradition, being an ideal accompaniment. We place the dish on plates, alongside steaming polenta, and for an extra touch of flavor, we can sprinkle some fresh herbs, such as parsley or dill. Enjoy your meal!
