To prepare a delicious mango peel syrup, the first essential step is to choose a healthy mango. It should be ripe but firm, without any visible spots or imperfections. Once you have selected the perfect fruit, it is important to wash it very well, using a special vegetable brush to remove any impurities or pesticides.

After the mango is clean, use a sharp knife to carefully remove the skin from the fruit's flesh. This delicious flesh can be eaten as is or used in various dishes, such as cakes or ice creams, bringing an exotic and flavorful taste. However, the peel should not be wasted, as it is the source of our special syrup.

Once you have removed the peel, cut it into pieces about 2-3 cm long. These pieces will be placed in a clean jar, and sugar will be added on top. Make sure the sugar covers the mango peels well. After adding the sugar, put the lid on the jar and shake it vigorously. This step is crucial because it helps the sugar evenly coat each piece of peel, thus facilitating the juice extraction process.

After the jar has been shaken well, set it aside, but don’t forget to check it from time to time. A few hours after preparing the mixture, you will notice that the mango peels start to release juice, and the sugar will gradually dissolve. This is a good sign, as it means the maceration process has begun.

The next day, to intensify the flavors, add a few tablespoons of vodka over the mango peels and sugar. If you don’t have vodka, rum is an excellent alternative, and the taste will be just as pleasant. After adding the alcohol, shake the jar again at regular intervals to ensure good homogenization of the ingredients. You will notice that the sugar will dissolve more and more, and the syrup will become increasingly aromatic.

After a few days, the syrup will be ready for use. It is ideal for soaking cake layers, giving them an exotic touch and an intense flavor. You can use the obtained syrup not only for cakes but also for various desserts, cocktails, or even to flavor yogurt. Thus, you will have a versatile ingredient that will transform any dish into a special culinary experience.
