Apple Rose Tart

To prepare a delicious apple rose tart, we start by gathering all the necessary ingredients. In a large bowl, we add 250 g of flour, 125 g of soft butter, 100 g of sugar, the grated zest of one lemon, a pinch of salt, one egg, and 1 packet of baking powder. It is essential for the butter to be taken out of the fridge the night before, so it softens and can be easily incorporated into the dough. Once we have added all the ingredients, we begin to knead with our hands until we obtain a homogeneous dough that easily comes away from the sides of the bowl. Once the dough is ready, we wrap it well in cling film and leave it in the fridge for 30 minutes.
During this time, we dedicate ourselves to preparing the apples. We wash 2-3 apples thoroughly, preferably Granny Smith for a pleasant contrast between sweet and sour. We cut them into thin strips, julienne, which we then divide in half. To facilitate shaping, we microwave them for 30-60 seconds, so they become softer and easier to roll. Once the apples are ready, we start forming the roses. We take a slice of apple and twist it, then add another slice of apple around the first and continue the process until we have a rose. This can be repeated to create roses of different sizes, depending on preferences. We carefully place the obtained roses on a plate.
After the dough has been in the fridge long enough, we take it out and roll it out on a baking sheet with a rolling pin. This will be placed in a tart pan, making sure to lay it down with the parchment paper. On top of the dough, we place another sheet of parchment and put the pan in the preheated oven at 180 degrees Celsius, letting it bake until it becomes golden.
In the meantime, we take care of the pudding. In a pot over heat, we warm 400 ml of milk. Separately, in a bowl, we mix a coconut pudding with 4 tablespoons of sugar and 50 ml of milk. When the milk in the pot starts to boil, we add the pudding mixture and continuously stir until it thickens. Once the pudding is ready, we pour it evenly over the baked dough.
We carefully place the apple roses on top of the pudding, and to add a touch of flavor, we mix a teaspoon of honey with a little melted butter in the microwave until we get a liquid paste. Using a brush, we glaze each rose with this mixture, giving them an appetizing shine. The pan goes back into the oven for another 5-7 minutes to finish baking.
Once the tart is ready, let it cool, then you can slice it and serve with joy. This delicacy not only looks spectacular but also brings an unforgettable taste. Enjoy!
