Perfect both as a dessert and as a creamy soup main course, this recipe will surely delight you. Additionally, it is an excellent choice for a tea snack or for relaxing moments with a good book. Let's get started!
Preparation time: 20 minutes
Cooking time: 25 minutes
Total time: 45 minutes
Servings: 8
Ingredients:
- 3 large apples (600-700 g)
- 30 g flour
- 50 g sugar
- 50 g sour cream
- 2 eggs (only yolks)
- 3-4 cinnamon sticks
Step 1: Preparing the apples
Start by washing the apples well to remove any impurities. Peel them and cut them into large pieces. Choose juicy apples, such as Granny Smith or Golden Delicious, for a balanced sweet and sour taste.
Step 2: Boiling the apples
Place the apple pieces in a large pot and cover them with water (about 1 liter). Add the sugar and cinnamon sticks. Put the pot over medium heat and let it boil for 15 minutes until the apples become soft. The aroma of cinnamon will fill the entire kitchen and make you feel like it's the cold season!
Step 3: Making the apple puree
After the apples have boiled, remove the cinnamon sticks and use a slotted spoon to transfer the apples to another bowl. Use an immersion blender or a regular blender to turn the apples into puree. Make sure the puree is smooth and homogeneous for a perfect texture.
Step 4: Thickening the cream
Put the apple puree back into the pot over heat. In a small bowl, mix the flour with a little of the liquid from boiling the apples to avoid lumps. Add the butter to this mixture and pour it into the pot with the apples. This step is optional, but the flour will help thicken the cream. If you prefer a thinner consistency, you can skip this step.
Step 5: Finalizing the cream
Let the mixture boil for another 10 minutes, stirring occasionally. In another bowl, mix the sour cream with the egg yolks and a little of the apple juice. Pour this mixture into the pot with the apples, then remove the pot from the heat. This combination will add delicious creaminess to the dish.
Step 6: Serving
The apple cream is served warm, sprinkled with a little ground cinnamon on top. You can also add some fresh apple cubes for decoration. This is a versatile recipe that can be adapted: you can add a hint of vanilla or a splash of lemon juice for a more vibrant taste.

For a truly special experience, serve the apple cream alongside cookies or muffins, or even with a scoop of vanilla ice cream. This recipe is perfect for chilly winter days, evoking pleasant memories and providing comfort.
