Pasta Salad with Chicken Breast
To create a delicious and nutritious chicken salad, we start by preparing the essential ingredients. The first step is to deal with the chicken breast. In a pot, we add enough water and a little salt, then we put the chicken breast to boil. It is important to let the meat boil until it becomes tender, about 20-25 minutes. Once it is ready, we take the chicken breast out of the water and let it cool. Once cooled, we cut it into thin strips or cubes, depending on personal preference.
In the meantime, we prepare the pasta. In another pot, we bring water to a boil and add a teaspoon of salt to flavor the pasta. When the water boils, we add the pasta and let it cook according to the instructions on the package, usually between 8 and 12 minutes, until al dente. After cooking, we drain it well and rinse it under cold running water to stop the cooking process and cool it down.
Once the pasta and chicken breast are ready, we turn our attention to the other ingredients. We take a can of corn, a strainer, and drain the corn, making sure to remove all the water. This ingredient will add a sweet and crunchy note to our salad. In addition, we take care of the cucumbers, which we slice into thin rounds, so that they integrate perfectly into the mix.
To bind all these ingredients together, we prepare a creamy mayonnaise. In a bowl, we place the two yolks – one boiled and one raw. We mix well, then add our favorite seasonings, such as salt, pepper, and a little mustard for extra flavor. After that, we gradually incorporate 100 ml of kefir, sour cream, or yogurt, continuously mixing until we achieve a smooth and creamy consistency.
In a large bowl, we add all the ingredients: the chopped chicken breast, the cooked pasta, the drained corn, and the cucumber slices. Over these, we add the previously prepared mayonnaise. Using a spatula or a large spoon, we gently mix so that all the ingredients combine evenly without breaking the pasta or chicken strips. We adjust the seasonings if necessary, and let the salad sit for a few minutes to blend the flavors. The chicken salad is now ready to serve, perfect for a meal with friends or as a quick and healthy lunch.
