Cheese Muffins

 Ingredients: - 500 g flour "000" freshly sifted - 5 g baking powder - Dr. Oetker - 5 g vegetable concentrate - 75 g blue cheese (I replaced this cheese with Camembert - Blanchette) - a handful of chives (this is the "unit of measurement" mentioned in the original recipe - I didn't have chives, so I used 1/2 of a large onion) - a handful of chopped coriander (I used a full teaspoon of dried coriander) - a handful of chopped basil (I used a full teaspoon of crushed basil) - 2 eggs - 260 ml UHT milk - 65 ml extra virgin olive oil - 125 g goat cheese

Camembert cheese and goat cheese muffins are a delicacy that combines the fine flavors of cheeses with fluffy textures and a refined taste. These muffins are ideal for a savory breakfast, a snack between meals, or even as an appetizer at a festive meal. Let's start with the preparation of the ingredients!

The first step is to take care of the cheese. Cut the Camembert cheese into small cubes so that it integrates evenly into the batter. Then, take the goat cheese and grate it, making sure it is as fine as possible to combine perfectly with the other ingredients. These two types of cheese will provide a rich and creamy flavor to our muffins.

In a large bowl, mix all the dry ingredients: flour, baking powder, vegetable concentrate, chives or onion, coriander, and basil. Add the Camembert cheese cubes and the grated goat cheese. Don't forget to keep a little goat cheese and herbs for the final decoration of the muffins. This detail will give an attractive appearance and enhance the aroma.

In a separate bowl, combine all the liquid ingredients: eggs, milk, and oil. Use an electric mixer to mix the ingredients at a low speed until the mixture becomes homogeneous and the milk froths a little. This step is essential to achieve a light and airy texture for the muffins.

After obtaining the liquid mixture, pour it over the dry ingredients. Use the mixer with spiral beaters to combine everything until you get a homogeneous composition. It is important not to overmix, so they do not become dense.

Meanwhile, preheat the oven to 180 degrees Celsius. Prepare the muffin tray by placing baking cups. You can opt for colorful or cheerful patterned cups that will add a touch of joy to your preparation.

Using two spoons, place a portion of batter in each mold, being careful not to exceed 3/4 of the capacity to allow the muffins to rise. After filling the molds, decorate the top with the remaining goat cheese and finely chopped herbs. This step will add not only extra flavor but also an attractive appearance.

Place the tray in the preheated oven and bake the muffins for about 30 minutes at a moderate heat. You will notice how they rise, becoming golden and fluffy. After they are nicely browned, take the tray out of the oven and let them cool a little in the molds to maintain their perfect shape.

These Camembert cheese and goat cheese muffins are now ready to be served! Enjoy them warm or at room temperature, alongside a fresh salad or a yogurt sauce. Bon appétit!
