To create a truly spectacular cake, you will need to follow a few essential steps. Start by separating the egg whites from the yolks, ensuring that the bowls used are completely clean, to achieve the best foam. In a large bowl, beat the egg whites with 5 tablespoons of sugar until they turn into a firm and glossy foam. This step is crucial as it will give the cake an airy texture. In another bowl, beat the yolks with the same amount of sugar until they become a creamy pale yellow mixture.
Once you have obtained the two mixtures, carefully combine them, taking care not to destroy the egg white foam. Then, sift the flour along with the baking powder and vanilla sugar to eliminate any lumps and ensure a uniform texture. Gradually add this mixture to the egg composition, gently mixing with a spatula until everything is well incorporated.
Prepare a baking tray that you grease with butter and dust with flour to prevent the layers from sticking. Pour the obtained mixture into the tray and level the surface. Place the tray in the preheated oven at 180 degrees Celsius and let it bake for about 45 minutes, or until the layer turns golden and a toothpick inserted in the middle comes out clean. To soak the layers, prepare a syrup from water, sugar, and rum essence. Boil the mixture until the sugar completely dissolves, then let it cool. The cream is another key element of this cake. Beat the yolks with the sugar until they become a light-colored cream. Incorporate the soft butter and rum essence, mixing well. Melt the chocolate in a double boiler, being careful not to burn it, then add it to the egg mixture. Finally, add the strong coffee and mix everything until you obtain a homogeneous cream, which you refrigerate to thicken slightly.
