Fluffy Donuts
Ingredients: 220 ml milk, 3 eggs (2 yolks + 1 whole egg), 1 cube of fresh yeast (or 1 packet of dry yeast), zest from 1 lemon, 40 g sugar, 4 tablespoons of oil, 480 g flour, powdered sugar.
To prepare the most delicious fluffy donuts, start with an essential step: dissolving the yeast in warm milk. Add two teaspoons of sugar to the warm milk, mix well, and let the yeast activate for about 10 minutes. During this time, it will release its aroma and start forming bubbles, thus preparing to transform the dough into a fluffy delicacy.
In a large bowl, sift the flour to aerate its texture. Then add the remaining sugar, grated lemon zest that will bring a subtle yet enticing fragrance, and a pinch of salt to balance the flavors. After mixing the dry ingredients well, make a well in the center and pour in the warm milk with the activated yeast, along with the beaten eggs. Mix with a spatula or your hands until the ingredients combine well and a soft dough forms.
Now begins the real challenge: kneading. Gradually add the oil, continuing to knead the dough for 15-20 minutes. After the dough has risen, knead it a little more to release the air. Divide the dough into equal-sized balls, which you flatten with a rolling pin, forming discs. A simple alternative is to roll out a sheet of dough and cut circles with a glass. Cover the formed discs and let them rise for another 15 minutes, so they become even fluffier.
For frying, heat the oil in a deep pan over low heat. When the oil is hot enough, fry the donuts “top side down” to achieve a nice shape and airy texture inside. Each donut will need a few minutes to brown nicely on each side. Once they are ready, remove them onto a paper towel to absorb excess oil.
