Cottage Cheese Gnocchi with Breadcrumbs

Ingredients: -500 g cottage cheese -1 teaspoon salt -1 large egg -130 g semolina -3-4 tablespoons flour -melted butter or olive oil, for gnocchi -1 tablespoon salt + 2 tablespoons oil for boiling gnocchi -breadcrumbs + butter (oil) -sugar, to taste

To prepare some delicious and fluffy gnocchi, start by kneading a smooth and non-sticky dough. In a large bowl, combine well-drained cottage cheese, salt, an egg, semolina, and flour. It is important that the cottage cheese is fresh and well-drained to achieve a fine texture. Mix the ingredients with a spatula or with your hands until you obtain a homogeneous dough. Once the dough is ready, wrap it in plastic wrap and let it chill for 30 minutes. This step will help firm up the dough and make it easier to shape.

After the dough has rested, sprinkle a little flour on the work surface and break pieces from the dough, shaping them into rolls with a diameter of about 1.5 cm. It is important to work with lightly floured hands to prevent the dough from sticking. Once you have formed the rolls, cut each roll into thick slices of about 1 cm. These slices will become gnocchi.

To give them their characteristic shape, take each piece of dough and roll it over the tines of an inverted fork. Press gently to imprint the pattern on each gnocchi. This detail will not only enhance the appearance but will also help hold the sauce later.

In a large pot, bring water to a boil. Add salt and a splash of oil to prevent the gnocchi from sticking. When the water is boiling, carefully add the gnocchi, stirring occasionally to avoid overcrowding. Boil the gnocchi until they rise to the surface, which is a sign that they are done. Once boiled, remove them with a slotted spatula and let them drain.

In a separate pan, melt a little butter or heat the oil and brown the breadcrumbs in this mixture, stirring constantly to prevent burning. Once the breadcrumbs turn golden, add the sugar and the drained gnocchi, mixing well to coat them evenly. If you prefer a sweeter taste, feel free to sprinkle additional sugar on top.

Gnocchi are most delicious served hot, so get ready to enjoy them immediately, alongside your favorite sauce or simply with a drizzle of olive oil. Their aroma, texture, and flavor will turn any meal into a memorable culinary experience. Enjoy your meal!
