Bone Broth with Pork
Ingredients: Pork bone borscht or "Yanis's soup" 3 medium potatoes 2 carrots 2 zucchinis 1 onion 1 red bell pepper 1/2 celery 1 parsley root Pork bones with meat Tomatoes in broth Sour cream for seasoning Borscht (I used magic borscht) Fresh parsley, dill, lovage Salt, pepper, delikat (optional)
To prepare a delicious and comforting soup, the first step is to boil the bones. They will give the soup a rich flavor and an unmistakable aroma. Choose beef or pork bones, depending on your preferences, and let them boil in a large pot with cold water over medium heat. Make sure to remove the foam that forms on the surface to achieve a clear and appetizing soup.
In the meantime, prepare the vegetables. It is recommended to use carrots, celery, onion, and pepper, all finely chopped. Heat a tablespoon of oil in a large skillet and add the vegetables, sautéing them lightly. This step will enhance the flavors and add a pleasant texture to the soup. Stir the vegetables in the oil for about 5-7 minutes until they become slightly soft and their aroma begins to be felt.
Once the bones have boiled sufficiently and the vegetables are ready, add the vegetable mixture to the pot with the bones. Cover everything with water, being careful not to exceed the maximum level of the pot to avoid overflow. Let the soup simmer on low heat for about an hour, or until the vegetables become very soft. This process will allow the flavors to blend and develop fully.
At this point, add the tomatoes to the broth, which will bring a bit of acidity and a fresh taste to the soup. If you have fresh borscht, boil it separately and add it to the soup. If you are using store-bought borscht, as I did with the magic borscht, add it directly to the pot. Let everything come to a boil so that the flavors blend perfectly.
Don’t forget to add your favorite herbs, such as parsley and dill, to add extra freshness and color to the soup. Cover the pot and let the soup simmer for a few more minutes to ensure all the ingredients mix well.
When you are ready to serve, adjust the soup’s taste with salt and pepper to your liking. Before pouring it into bowls, add a generous spoonful of sour cream, which will provide a creamy taste and pleasant texture.
