When it comes to birthday parties for kids, there's nothing more special than a themed cake that reflects the personality of the birthday child. This time, I decided to make my little boy an adorable cake featuring his favorite character, Mickey Mouse, to celebrate his 2nd birthday. This Mickey cake recipe is not only delicious but also easy to make, with a look that will bring a smile to any child's face. Let's embark on this culinary journey!

Ingredients for the sponge:
- 6 eggs
- 250 g sugar
- 300 g flour
- 10 tablespoons water
- 1 teaspoon baking powder

Ingredients for the cream:
- 400 g fruit yogurt (preferably peach for a sweet flavor)
- 500 ml whipped cream
- 3 tablespoons sugar
- 1 fruit compote (peach or pineapple)
- 20 g gelatin (2 packets of 10 g)
- 100 g Finetti chocolate
- 1 pack of marshmallows (about 100 g)
- 300 g powdered sugar

Ingredients for the syrup:
- Water
- Sugar
- Orange peel (for a fresh and aromatic taste)

Preparing the sponge

1. Beat the yolks: In a large bowl, cream the yolks with the sugar, gradually adding a tablespoon of water. Continue mixing until you get a smooth cream, similar to an ointment. This is the base for your sponge, and the secret is to be patient at this stage.

2. Mix the dry ingredients: In another bowl, sift the flour with the baking powder. This step is essential because aerating the flour will help achieve a fluffy sponge.

3. Combine the mixtures: Fold the flour mixture into the yolk cream, adding it little by little to avoid lumps. It is important to mix with a spatula or whisk using gentle, upward motions.

4. Whip the egg whites: In another bowl, beat the egg whites until stiff peaks form. These will add extra volume to your sponge.

5. Combine the egg whites with the mixture: Gently fold the beaten egg whites into the yolk and flour mixture to retain the air in the whites.

6. Bake the sponge: Grease a 26 cm cake pan with butter and dust it with flour. Pour the mixture into the pan and bake in a preheated oven at 180°C for about 30 minutes. Check with a toothpick – if it comes out clean, the sponge is ready. Let it cool completely.

2. Prepare the gelatin: Take 3 tablespoons of the compote juice and bring it to a boil in a small pot. Separately, dissolve the gelatin in 100 g of compote juice, then pour it into the hot liquid. Be careful not to let it boil, or the gelatin will lose its properties.

3. Combine the ingredients: Let the gelatin cool slightly, then fold it into the yogurt mixture. Then, add 500 g of whipped cream and the blended fruit from the compote. This combination will make the cream delicious and fluffy.

Assembling the cake

1. Cut the sponge: Once the sponge has cooled, cut it into three equal parts. Each layer should be well soaked to remain moist and tasty.

2. Soak the layers: Prepare a simple syrup from water, sugar, and orange peel. Pour the syrup over each layer of sponge.

3. Layer with cream: Place the first layer of sponge on a platter, pour some cream, then add another soaked sponge layer. Repeat the process, ensuring the last layer is also a sponge.

4. Prepare Mickey's ears: From the second sponge, cut circles using a cutter or a glass. Each circle is cut in half to form the ears. Use a bowl with plastic wrap to assemble the two ears.

5. Finalize the cake: Wrap the ears and chill them. When the cake is well chilled, you can decorate with Finetti chocolate and marshmallows to create a playful look.

Serving and variations

The cake can be served as is, but you can also add a chocolate glaze or whipped cream on top for an extra special look. Don't forget to decorate with Mickey Mouse figurines for a striking visual impact.
