Turkey Breast and Zucchini Burger
To prepare these delicious turkey burgers, start by gathering all the necessary ingredients for the marinade. In a large bowl, combine olive oil, lemon juice, crushed garlic, salt, pepper, and various herbs of your choice, such as oregano or rosemary. Mix the ingredients well until you achieve a smooth marinade. Cover the bowl with plastic wrap and let it sit in the refrigerator for an hour. This step is essential as it allows the turkey meat to absorb the intense flavors, resulting in a juicy and savory burger.
Meanwhile, prepare the other ingredients needed for assembling the burgers. Chop your favorite vegetables, such as tomatoes, cucumbers, onions, or avocado, and place them in another bowl. If you like, you can also add melted cheese for extra flavor. Now, let’s focus on the sauce. Choose a sauce you prefer, such as garlic mayonnaise or a yogurt sauce with dill. Mix the sauce ingredients in a small bowl, cover, and place it in the refrigerator to chill and combine the flavors.
After the hour of marinating has passed, remove the bowl with the turkey meat and transfer the meat along with the marinade to a blender. Pulse until you achieve a well-ground mixture, but not too fine, to maintain a pleasant texture. This mixture will be transferred to the bowl with the other previously prepared ingredients. Mix everything with a spatula, ensuring that the ingredients are evenly distributed.
Preheat the oven to 190 degrees Celsius (equivalent to gas 5). Prepare a baking tray covered with aluminum foil, which you will brush with a little olive oil to prevent the burgers from sticking. Divide the meat mixture into 6 equal parts, or depending on the desired size of the burgers, and shape the patties with your hands. They should be slightly thicker, as they will compress during cooking.
In a stainless steel or cast iron skillet, add a tablespoon of olive oil and heat over low heat. Arrange the burgers in the skillet, being careful not to overcrowd them. Fry them for 2-3 minutes on each side, just enough to give them a lightly browned crust. Once they have a nice color, transfer the burgers to the prepared tray and bake them in the oven for about 15 minutes, or until fully cooked.
When the burgers are ready, remove them from the oven and let them rest for a few minutes. Serve them on fresh buns, preferably homemade, add the fresh vegetables and the sauce prepared earlier. For the marinade: 250 g turkey breast cut into small pieces, 2 green onions finely chopped, 2 cloves of garlic finely chopped, 1 teaspoon organic soy sauce, 1/4 teaspoon Worcestershire sauce, 1/4 chili pepper finely chopped (seeds and membranes removed), a pinch of dried thyme, 45 ml extra virgin olive oil, a pinch of allspice, 5 fresh mint leaves finely chopped, 1/2 teaspoon Dijon mustard. For the assembly: 1 grated zucchini, 2 organic eggs, 1 grated boiled potato, 100 g breadcrumbs. For the sauce (optional): 100 g Greek yogurt, 1 tablespoon ketchup, 1/2 teaspoon Dijon mustard, 1 teaspoon finely chopped fresh mint, 1 small clove of garlic finely grated, a few drops of Tabasco or Frank's.
