Meat roll in strudel dough
Ingredients: 300 g minced pork meat, 1 can sliced mushrooms, 200 g pre-cooked smoked ham, salt, pepper, seasoning, 3 boiled eggs, 2 fresh eggs, sesame seeds. For the dough, we need: 200 g flour, 60 g lard, 1 yolk, sour cream as needed, 1 pinch of salt. 30 g melted margarine for greasing the dough.
To prepare a hearty and delicious strudel, we will focus on each step of the recipe, ensuring that the final result will meet expectations. We start by combining the minced meat with diced ham, adding mushrooms to the mix, which will provide a savory taste and pleasant texture. Make sure the mushrooms are fresh, cleaned, and finely chopped. At this stage, we add fresh eggs, which will bind all the ingredients together. Season the mixture to taste, using salt, pepper, and, if desired, herbs such as thyme or parsley to enhance the flavors.
Once the filling is ready, we turn our attention to the strudel sheet. It is important to ensure that the sheet is stretched as thin as possible to achieve a crispy and light texture. In a bowl, we mix the flour with lard, egg yolk, and sour cream, kneading well until the mixture becomes homogeneous and elastic. This is the base of our delicious sheets. After obtaining a uniform dough, we roll out the sheet and brush it with melted margarine, giving it an extra flavor. We roll the sheet and let it rest in the refrigerator for about two hours, so that the gluten in the flour relaxes, making it easier to roll out later.
After letting the sheet rest, we stretch it along the length of the roll. Here, we begin to add the filling that was prepared earlier. Don't forget to place the three boiled eggs, cut in halves or quarters, in the middle of the filling to add a special touch. Fold the edges of the sheets to seal the filling and then carefully roll the strudel, taking care not to break it. We place the roll in the greased pan, where we brush it with a beaten egg to achieve a golden and appetizing crust.
