Preparation Time: 30 minutes
Baking Time: 25 minutes
Total Time: 5 hours (including cooling)
Number of Servings: 12-16
Ingredients
For the layers:
- 4 eggs
- 1/2 cup sugar (approximately 100 g)
- 1 cup oil (approximately 250 ml)
- 1 cup milk (approximately 250 ml)
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 packet baking powder
- Flour as needed (approximately 1.5 kg)
For the cream:
- 500 g sugar
- 13 tablespoons flour
- 2 liters milk
- 1/2 teaspoon salt
- 300 g dark chocolate
- 400 g quality butter
- Rum essence (to taste)
- Ground walnuts for decoration
Step-by-Step Preparation
1. Preparing the Layers
Start by preheating the oven to 180°C. In a large bowl, beat the eggs with the sugar using a mixer until you obtain a creamy and fluffy mixture. This is the moment when air needs to be incorporated, so don’t rush!
2. Adding the Wet Ingredients
Gradually add the milk, salt, and oil, continuing to mix. Make sure all ingredients are well incorporated.
3. Combining the Dry Ingredients
In a separate bowl, mix the flour with the baking powder and baking soda. Start adding the flour mixture to the wet mixture gradually, until you obtain an elastic and manageable dough. You may not need all the flour, so add it little by little and test the dough’s consistency.
4. Baking the Layers
Divide the dough into 8 equal parts. On the back of a baking tray lined with parchment paper, roll each part of the dough into thin layers. Bake them for 10-12 minutes until golden. After baking, let them cool.
5. Preparing the Cream
In a large pot, bring the milk and salt to a boil. In another pot, caramelize the sugar. When it turns golden, add the flour, stirring continuously with a wooden spoon to avoid lumps.
6. Thickening the Cream
Gradually pour the hot milk into the sugar and flour mixture, stirring constantly until the cream thickens. When ready, remove from heat and add the butter and chocolate. Mix well until homogeneous, then add the rum essence. Allow the cream to cool.
7. Assembling the Cake
Take one layer of dough and place it on a serving platter. Spread a layer of cream, then place the second layer and repeat the process until all layers are used. Make sure to keep some cream for covering the cake at the end.
8. Pressing and Cooling
Wrap the cake in plastic wrap and place a weight on top to help the layers stick together. Refrigerate the cake for at least 3-4 hours, but it’s best to leave it overnight.
9. Cutting and Serving
Once cooled, remove the wrap and trim the edges. Cut the cake into long strips of 5-6 cm. Place each strip on a serving board and, with a sharp knife, cut the strips diagonally to form triangles. Spread cream on the white part of the triangles and stick them together to achieve the characteristic Carpathian shape. Cover the cake with the remaining cream and sprinkle ground walnuts on top for an appetizing look.
Suggestions and Variations

- If you prefer a less sweet cake, you can reduce the amount of sugar in the cream.
