Instructions
1. Soak the gelatin in 100 ml of cold water. Set it aside until it becomes gel-like.
2. In a saucepan, mix the sugar with the egg yolks, flour, vanilla essence, and the packet of bourbon vanilla sugar. Whisk well. Gradually add the milk, a little at a time, to avoid lumps. Once all the milk is incorporated, the mixture should be smooth.
3. Place the saucepan over low heat and stir continuously until the cream thickens. It's important not to stop stirring, or it may stick. The cream is ready when it begins to thicken. Remove the pan from heat and let it cool for about 10 minutes – it should be warm, not hot.
4. Once the cream has cooled sufficiently, add the swollen gelatin and whisk well until fully dissolved.
5. Cut the fruits (oranges, kiwis, and canned pineapple) into bite-sized cubes. Don’t use too many – if you add too much fruit, the cream may become too runny.

7. Fold the egg cream with gelatin into the whipped cream in two batches. Add half of the cream, mix briefly until combined, then add the remaining cream and mix again.
8. Line the sides of the springform pan with ladyfingers, placed vertically after quickly dipping them (2-3 seconds) in the pineapple juice. Do not let the ladyfingers absorb too much liquid, or they will become overly soggy.
9. Place a layer of ladyfingers on the bottom of the pan, also quickly dipped in juice.
10. Spread a layer of cream over the ladyfingers, then sprinkle fruit cubes over the cream. Gently press the fruits into the cream.
11. Continue with another layer of ladyfingers, then cream, then fruit, until you finish the mixture. The last layer should be cream.
12. Cover the cake and refrigerate it overnight to set properly.
13. For decoration, slice the remaining fruits thinly. I used half a banana for the trunk of a "palm tree," thinly sliced kiwi and oranges for leaves, and made flowers from strawberries.
14. Melt the chocolate in a double boiler and drizzle it over the ladyfingers on the sides, allowing it to drip down slightly. The remaining chocolate goes into a piping bag, and I write "Happy Birthday" on paper. Once it hardens, I break larger pieces and place them on the cake slices when serving.
15. The cake should be kept in the refrigerator until serving.
