To prepare these delicious pancakes, start by gathering all the necessary ingredients so that you have everything at hand. You will need 4 egg yolks, 200 g of sugar, 500 ml of milk, 300 g of flour, 1 packet of baking powder, 4 egg whites, a pinch of salt, and optionally, a little vanilla for added flavor.

The first step is to separate the yolks from the whites. In a large bowl, add the yolks and sugar, then start whisking them vigorously with a whisk or mixer until the mixture becomes frothy and changes color to whitish. This is an essential step, as the incorporated air will contribute to the fluffy texture of your pancakes.

Next, gradually add the milk while continuing to mix. It is important to integrate each ingredient well to achieve a homogeneous mixture. In another bowl, sift the flour together with the baking powder and then incorporate the dry mixture into the yolk and milk mixture. Gently mix using a spatula to avoid forming lumps.

Meanwhile, beat the egg whites with a pinch of salt until stiff peaks form. This step will add volume and aeration to the pancakes. Carefully fold the beaten egg whites into your batter using gentle folding motions. It is important not to overmix, so the batter remains fluffy.

In a non-stick skillet, add a drop of oil and heat it over low heat. Pour in a portion of the batter, forming pancakes of the desired size. When you notice bubbles starting to appear on the surface of the pancake, it is time to flip them using a spatula. Let them cook for a few minutes on this side until they become golden.

After frying them, place them on a platter and continue the process with the remaining batter. In total, you should get about 8-9 delicious pancakes.

For a special presentation, serve them with cherry jam or any other preferred jam, and if you have a little maple syrup, do not hesitate to add it for an even more intense flavor. These pancakes are ideal for a savory breakfast or a sweet snack, and each bite will take you to a world of flavors and textures, making you feel like a true kitchen master!
