Grape leaves, preserved for winter

To prepare grape leaves for preservation, start by carefully cleaning and washing all the leaves. Cut the stems with a sharp knife, taking care not to damage the delicate leaves. It is essential to remove any impurities, so rinse them under a stream of cold water, ensuring that no dust or insects remain. This step is crucial for achieving quality preservation.
Once the leaves are clean, prepare a large pot of water that is boiling well. When the water reaches a boiling point, blanching the grape leaves will help maintain their color and texture. Add the leaves to the boiling water and let them cook for 2 to 5 minutes; the exact time depends on the size and thickness of the leaves. This process will soften the leaves and make them much easier to handle later. After blanching, remove the leaves using a spatula or a slotted spoon and drain them well to remove excess water.
Once they have cooled slightly, it’s time to pack them for freezing. It is recommended to portion them into groups of 10 leaves. You can either stack them on top of each other or carefully roll them up into small rolls. This will not only save space in the freezer but also make it easier to take exactly the amount you need when you want to use them.
To ensure optimal preservation, use special freezer bags. Make sure to remove as much air as possible from the bags before sealing them. Remaining air can lead to ice crystal formation and affect the quality of the leaves. Flatten the bags before labeling them, indicating the freezing date and product type.
Once all the bags are prepared, you can place them in a corner of the freezer. Grape leaves can be stored in the freezer for up to a year, allowing you to enjoy their fresh and vibrant taste in various dishes, such as stuffed cabbage or salads. This way, you will always have a versatile and delicious ingredient on hand, ready to complement your meals!
