After the boiling time has expired, we remove the pieces of melon and drain them well, leaving them to cool on a clean surface. Meanwhile, we take care of preparing the jars. In a separate pot, we prepare a syrup from vinegar, sugar, and a few pieces of cinnamon. It is important to foam the mixture to ensure that all the ingredients are well incorporated. When the syrup has begun to thicken, we carefully pour it over the pieces of melon, making sure that all are completely covered.

After pouring the hot syrup, we let the jars cool completely at room temperature. Once they have cooled, we seal the jars tightly with sterilized lids and store them in the pantry, where they can be kept for a long time. These cantaloupe pickles will add a touch of freshness and a surprising taste to your meals, being ideal as a side dish for meat or cheese dishes.
