We begin the culinary adventure with a delicious dough that serves as the base for some special pumpkin pies. First, I mixed the ingredients for the dough, making sure they were well integrated. I used a combination of flour, water, oil, and a pinch of salt, all essential for achieving an elastic and flavorful dough. After kneading it carefully, I decided to let it rest in the fridge for a few hours. This will allow it to become more pliable and, in addition, will give it a nicer texture when baked. This step is crucial, so I took advantage of the waiting time to take care of other chores around the house, avoiding the hustle and bustle of the little ones.

After the dough rested, I took the piece of dough and divided it into nine equal balls. Each ball was rolled out on a well-floured surface using a rolling pin, which I affectionately call a "făcăleț". I tried to achieve the thinnest sheets possible, and the process was extremely enjoyable. After rolling out the first sheet, I set it aside and continued with the second, repeating the same procedure. Between the two sheets, I applied a thin layer of oil with the help of a brush, which will give the pies a crispy texture and a wonderful taste.

After overlapping the two sheets, I rolled them out again with the rolling pin, being careful not to tear them. Now it was time to add the pumpkin filling. The grated pumpkin was evenly distributed over the layer of dough, bringing a sweet and comforting aroma. After carefully rolling the pie, I repeated the procedure with the other balls of dough, transforming them all into thin sheets, ready for baking.

The formed pies were carefully placed in a non-stick tray, which will help with even baking and easy removal later. I preheated the oven to 180 degrees Celsius and, after all the pies were ready, I placed them in the oven for about 30 minutes. During this time, the aroma of pumpkin and oil will spread throughout the house, preparing us for a delicacy we won't soon forget. After the baking time expired, I took the pies out of the oven, letting them cool slightly before savoring them. The combination of textures and flavors will turn every bite into an unforgettable experience!
