Lentil soup with sausages and bacon
Ingredients: 200g lentils, 1 leek, 1 large carrot, 1 liter of water (vegetable soup), 2 tablespoons of flour, 100g bacon, 100g sausage, 2 tablespoons of vinegar, salt, pepper, oil
To prepare a delicious lentil soup with vegetables and meat, start by boiling 800 ml of broth in a medium pot. Choose a vegetable or meat broth, depending on your preferences. Once the broth reaches a boiling point, add the lentils, making sure to check the instructions on the package, as the cooking time varies depending on the type of lentils you are using. Green or brown lentils will require about 25-30 minutes, while red lentils cook faster, in about 15-20 minutes.
Meanwhile, prepare the vegetables. Cut the carrots, celery, bell pepper, and onion into small cubes, ensuring that the sizes are uniform for even cooking. After the lentils have cooked for about 15 minutes, add the chopped vegetables to the pot. They will add a fresh taste and pleasant texture to the soup. Let them boil together with the lentils for the remaining indicated time.
In a separate pan, prepare a roux from 2-3 tablespoons of oil and 2 tablespoons of flour. Mix the ingredients well over medium heat until the mixture turns golden, being careful not to burn it. Once you have achieved a nice color, deglaze the mixture with 200 ml of the hot broth, stirring continuously to avoid lumps. Pour this mixture into the pot with lentils and vegetables, mixing well to incorporate the roux into the soup, which will add creaminess.
Next, slice some sausages and bacon into thin pieces. Heat a pan over medium heat and fry the meat slices until they become crispy and golden, releasing delicious flavors. Once ready, add them to the soup, allowing them to infuse with the soup's flavors. Finally, season the soup with salt, pepper, and a few drops of vinegar for a touch of acidity that will balance the taste.
To finish the dish, sprinkle a handful of fresh herbs on top, whether parsley or dill, which will add a touch of freshness and color. Once all these steps are completed, let the soup simmer for a few minutes to meld the flavors, then serve it hot, savoring each spoonful of lentils, vegetables, and meat.
