Plum Jam with Vanilla from Red Plums

 Ingredients: For 1 serving: -2.5 kg red plums -2 kg sugar -2 packets of vanilla sugar -juice from 1 lemon

Mirabelle plum jam is a special delicacy with a sweet-sour taste that reminds one of summers spent in the garden. Making this jam is a simple process but requires a bit of patience and attention to detail. We start by cleaning the mirabelles of their stems, ensuring they are well washed. Then, we place them in a deep pot and cover them with water, making sure they are well submerged. We put them on low heat and let them boil for about 10-15 minutes, or until the skin cracks and the flesh begins to separate from the pit.

After boiling, we take the pot off the heat and drain the water, being careful to keep the fruits intact. The next step is to pass the mirabelles through a fine sieve to separate the pulp from the pits and skins. This step is essential to achieve a fine texture for the jam. The resulting paste is put back on the heat, stirring constantly for about 20-25 minutes until it starts to thicken.

Once we achieve the desired consistency, we add sugar, vanilla sugar, and lemon juice, continuing to boil the mixture for another 20 minutes or until the jam is well thickened. It is important to check the consistency of the jam with the drop test; if the drop does not hold well, we put the pot back on the heat for a few more minutes. We must ensure to take the pot off the heat before checking to prevent the jam from boiling continuously.

Once the jam is ready, we pour the hot mixture into sterilized jars, ensuring they are well cleaned. We screw on the lid and place the jars in a warm spot, wrapped in blankets, allowing them to cool completely in this position. This method helps create a vacuum that will keep the jam fresh for a long time. Once cooled, we label each jar and store them in the pantry, ready to delight us with their unique aroma on winter days.
