Truffle Cookies
The butter and chocolate are placed on low heat and stirred constantly until the mixture becomes homogeneous, having a fine and glossy texture. It is essential not to let the mixture boil, as this could ruin the taste and final consistency of the cake. Once the butter has completely melted and the chocolate has perfectly integrated, we add the sugar. It is recommended to use fine sugar, which will dissolve more easily in the mixture. We turn on the mixer at medium speed and mix for a few minutes until the sugar is completely incorporated and the mixture becomes slightly frothy.
At this point, it is time to add the eggs, one at a time, continuing to mix. They should be at room temperature to integrate better. Each egg must be well homogenized before adding the next. After incorporating all the eggs, we will add the vanilla essence, which will bring an extra flavor and balance the sweet taste of the chocolate.
Next comes the stage of adding the dry ingredients. In another bowl, sift the flour and cocoa together with a pinch of salt to balance the flavors. This combination will give the cake a soft and fluffy texture. Gradually, we start to incorporate the dry ingredients into the wet mixture, using a spatula or a wooden spoon to avoid forming lumps. We mix gently, without insisting too much, so as not to develop the gluten in the flour.
If we want to add other ingredients, such as nuts, hazelnuts, or chocolate chips, now is the perfect time to integrate them into the mixture. They will add texture and an extra taste to the cake. After mixing well, we will prepare a baking tray, which we grease with a little butter or line with baking paper to prevent sticking.
We pour the mixture into the tray and level it evenly. We preheat the oven to 180 degrees Celsius and bake the cake for about 25-30 minutes, or until a toothpick inserted in the center comes out clean. After baking, we let the cake cool in the tray, then we can cut it into squares and serve, possibly dusted with powdered sugar for a more elegant appearance. This chocolate cake will surely become a favorite among loved ones!
