Portobello Pizza
When the fast ends, I feel the need to let my imagination run wild in the kitchen, even if I am not necessarily an advocate of the strict rules imposed by religion. My faith is personal; I do not define myself by traditional rituals and customs. However, I respect the tradition of those who choose to fast for profound reasons. So, in the spirit of this holiday, I propose a recipe for a cute little 'pizza', perfect for the beginning of the culinary season.
For this delicious 'pizza', you will need a few essential ingredients. We start with portobello mushrooms or, if they are not available, you can use large, open, and 'ripe' champignon mushrooms. Marinara sauce is another key ingredient; opt for the simple version, without seafood, with juicy tomatoes, fresh basil, and aromatic oregano. Marinated tofu cheese is another important element, and to give it a perfect taste, don't forget the pampered olives, which have been matured in olive oil along with slices of lemon and sprigs of rosemary.
The first step is to brush the mushrooms with oil using the oil in which the tofu was marinated. It is important not to add too much salt, as the mushrooms will soften too much while baking. Fill each mushroom with a few pieces of tofu cheese, then add a generous layer of marinara sauce, slices of olives, strips of fresh basil, and again, a few pieces of cheese. Place the stuffed mushrooms on a tray lined with parchment paper.
The baking will take place in the oven for about 10 minutes. Tofu does not melt like other cheeses do, but it provides a pleasant texture and a savory taste. I opted for tofu, which is good to have on hand, especially if you have vegetarian friends.
For those who are hesitant about tofu, you should know that marinated tofu, as I prepare it, is truly delicious! I had the chance to compare it with store-bought marinated tofu, but it does not compare to what I get from the jar. Moreover, the oil in which the tofu has been is perfect for seasoning salads, whether they are winter, summer, spring, or autumn salads.
