Ingredients: -1 package of pastry sheets Filling: -120 g flour -50 g butter -80 ml milk -6 eggs -300 g telemea cheese -350 g cottage cheese -150 g grated parmesan / cheese / sheep cheese -1 bunch of fresh parsley, finely chopped For greasing: -250 g melted butter / oil -3 teaspoons sesame
Leave the pastry sheets to thaw, ensuring they are fully opened and slightly damp to facilitate handling. Preparing the filling is an essential step in making a delicious pie. We start by lightly sautéing the flour in the heated butter, being careful not to let the flour change color. This step is crucial as it helps us achieve a fine texture and pleasant flavor. Once the flour is sautéed, we will dilute the mixture with milk, continuing to stir constantly to prevent lumps from forming. Allow the mixture to simmer on low heat, stirring constantly, until it thickens, achieving a creamy consistency. Once it reaches the desired consistency, let it cool.
In a large bowl, carefully incorporate the beaten eggs, then add the crumbled cheeses - whether you opt for grated parmesan, cheese, or sheep's cheese, each variant will add a distinct note to the pie. Also, add the finely chopped green parsley, which will provide a fresh taste and vibrant color to the filling. Mix all the ingredients well, ensuring they are evenly distributed. Once the filling is ready, set it aside and prepare to assemble the pie.
Greasing the baking tray with butter is an important step to prevent sticking. After preparing the tray, divide the pastry sheets into two, keeping them slightly overlapping to avoid drying out. Place the first half of the sheets in the tray, generously greased with melted butter, making sure to cover the edges of the tray as well. Pour the filling evenly, ensuring it is distributed equally. Bring the edges of the overlapping sheets over the filling to seal everything well. Cover with the remaining sheets, which you also grease generously with butter, including the last sheet, which will become crispy and golden when baked.
For an extra flavor and appearance, sprinkle sesame seeds on top of the pie, which will provide a pleasant texture. Using a sharp knife, portion the pie, cutting only the top layer of sheets so as not to disturb the filling inside. Preheat the oven to 180 degrees Celsius and place the pie inside for about 45 minutes or until the top sheets become nicely browned.
