If you are looking for a simple and quick recipe that is full of flavor, penne with olives and fish is the perfect choice. This dish is ideal for a family dinner or a gathering with friends. Here’s how to prepare it step by step.

Ingredients:
- 300 g penne
- 2 suitable pieces of fish (mackerel or herring)
- 60 ml olive oil
- 100 g olives (preferably brown olives, which add a touch of flavor)
- 1 white onion
- 1 red onion
- 400 g tomatoes in puree or 3-4 tablespoons of tomato paste
- A few cloves of garlic
- Dried or fresh thyme
- Chopped fresh mint
- Fresh basil
- Pasta seasoning
- 1 glass of white wine or meat broth
- Grated Parmesan, for serving

Preparation method:

1. Start by preparing the water for the pasta. Place a large pot on the heat, add water, a little salt, and a splash of olive oil. When the water reaches boiling point, add the penne pasta. Cook them according to the package instructions, but make sure to cook them "al dente" for perfect texture.

2. Meanwhile, prepare the sauce. In a large skillet, heat the olive oil over medium heat. Add the chopped white and red onions. Sauté for 5 minutes until they become translucent, stirring occasionally.

3. Add a few chopped garlic cloves and let them sauté for another minute until they release their aroma.

4. Add the tomatoes in puree or tomato paste and mix well. Let the sauce simmer for 5-7 minutes until it thickens slightly. If you are using white wine, pour it in now and let it boil for 2-3 minutes to evaporate the alcohol.

5. Add the fish to the sauce. If using mackerel or herring, make sure it is well cleaned of bones and cut into cubes. Cover the skillet and let the fish cook for 5-7 minutes until it becomes opaque and flakes easily with a fork.

6. Finally, add the olives and the spices (thyme, mint, basil) to the sauce. Mix well and let the flavors combine for another 2 minutes.

7. When the pasta is ready, drain it and add it to the skillet. Mix well to combine the pasta with the delicious sauce.

8. Serve the penne with olives and fish immediately, sprinkled with grated Parmesan on top for an extra touch of flavor.

Useful tips:
- If you want a more intense flavor, you can also add some green olives.
- Instead of white wine, you can use meat broth for a heartier version.
- For a fresh note, try adding some chopped fresh basil leaves at the end, just before serving.

This penne with olives and fish recipe is not only easy to prepare but also extremely tasty, perfect for those who want to enjoy a refined dish in the comfort of their own home. Enjoy your meal!
