To start this delicious recipe, make sure you have all the ingredients ready at hand. The first step is to mix the flour with the salt in a large bowl. This combination will provide a solid base for your dough. Add the butter cut into small pieces, along with the lard, then using your palms, rub the ingredients together until you achieve a texture similar to fine crumbs. This process is essential for getting a flaky and flavorful crust.

Once you have the desired consistency, start adding water, a little at a time, mixing with a fork. Continue adding water until the dough begins to form. Then, shape two balls from the obtained dough, wrap them in plastic wrap, and place them in the refrigerator for about 30 minutes. This resting time will help firm up the dough, making it easier to handle.

While the dough cools, prepare the filling. Grate the orange zest and squeeze the juice, adding them to a separate bowl. Peel the apples and grate them, squeezing out the excess juice. Add the grated apples to the orange mixture, then incorporate the cranberries, raisins, walnuts, white sugar, and brown sugar, along with a little flour. Mix everything well until the ingredients are evenly distributed.

Preheat the oven, placing a baking tray inside to heat up. Set the temperature to 200 degrees Celsius (400 degrees Fahrenheit) or level 6 for gas ovens. On a lightly floured surface, roll out one of the two pieces of dough to a thickness of about 3 mm. Place the dough in the tart pan, making sure to cover the edges well. Pour the apple mixture inside, ensuring it is evenly distributed.

Remove the second piece of dough from the refrigerator, roll it out, and cut wide strips about 2 cm wide, forming 10-12 pieces. Brush the edges of the dough with a beaten egg mixed with a tablespoon of water, then lay the strips of dough over the filling, creating a lattice pattern. Press the edges gently to seal them well.

Bake the pie for 20 minutes at the set temperature, then reduce the temperature to 180 degrees Celsius (350 degrees Fahrenheit) or level 4 for gas. Continue baking until the crust turns golden and the filling begins to bubble. It is important to use the preheated tray, as this will ensure even baking of the dough underneath, thus preventing issues caused by moisture. This is an effective method I have learned that will certainly improve the texture of your pie. Finally, let the pie cool slightly before serving.

Ingredients: For the dough you need 280 g flour, 1/2 teaspoon salt, 85 g cold butter cut into pieces, 85 g cold lard, 65-125 ml cold water (I kept ice in the water). For the filling: zest of one orange, 3 tablespoons of freshly squeezed orange juice, 2 large grated apples, 170 g cranberries, 70 g raisins, 30 g chopped walnuts, 215 g sugar, 115 g brown sugar, 2 tablespoons flour.
