Meatball Soup with Radishes (Luobo Wanzitang)

 Ingredients: 450 gr. white radish, 200 gr. minced meat, 2 gr. ginger, a few sprigs of coriander (about 10 gr.), 9 gr. salt, a little ground black pepper, 1 gr. table wine, 5 gr. starch, one egg

To prepare a meatball soup with white radish, we start by preparing the minced meat. In a small bowl, we put the minced meat and add finely chopped ginger, which will bring a spicy and aromatic taste to our dish. We continue by sprinkling 3 grams of salt and ground black pepper, to taste, to intensify the flavors. The table wine will add a subtle fragrance, while the egg will help bind the ingredients together. We mix the meat well in a clockwise direction until we achieve a viscous and consistent mixture. Finally, we add the starch, which will contribute to the final texture of the meatballs, and mix again.

Now we move on to the white radish, which we wash thoroughly and peel. We cut it vertically in half, and then each half is cut again into two, resulting in quarters. These are then cut crosswise into thin slices about 1 mm thick, so they cook evenly and add a crunchy texture to the soup.

Fresh coriander is an essential ingredient, so we remove the roots and dried leaves, wash the rest well, and cut the leaves into 1 cm pieces. This ingredient will provide a fresh taste and a special aroma to the dish.

In a pot, we pour an appropriate amount of water and cover it with a lid to heat it on high heat. Once the water starts to boil, we add the slices of white radish and sprinkle about 6 grams of salt. When the soup reaches boiling point again, we reduce the heat to minimum and start shaping the meatballs with a teaspoon, which we moisten beforehand in the soup to avoid sticking. This technique makes shaping the meatballs easier and faster.

After all the meatballs are placed in the pot, we adjust the heat to high intensity. When the soup boils, we remove the foam from the surface to achieve a clear and appetizing soup. We let it boil on medium heat for two minutes, then adjust it back to high heat. Finally, we add the finely chopped coriander and turn off the heat, the soup being ready to serve.
