The tart dough is an essential base that will add flavor and texture to the final dish. We start by preparing a generous amount of dough, perfect for a delicious tart, but if you wish, you can adapt the recipe for a smaller portion using 250 grams of flour and adjusting the other ingredients accordingly. The first step is to sift the flour into a bowl, ensuring it is aerated and free of lumps. We sprinkle salt over the flour, and then we take care of the yeast. We rub the yeast together with the sugar until it completely dissolves, forming a smooth paste, which we will add to the flour. We begin to mix the dry ingredients, and along the way, we add the sour cream which will provide additional moisture and a pleasant taste.

Warm water should be gradually poured into the mixture, and we will knead the dough patiently until it becomes elastic and slightly sticky. Finally, we incorporate the oil, which will give the dough a fine texture. We cover the dough with a clean towel and let it rise for 35-40 minutes in a warm place, away from drafts, to puff up and become fluffy.

In the meantime, we take care of the filling. We wash the zucchini and slice them into thin rounds, then place them in a sieve, sprinkling with salt. We let the zucchini drain for about 30 minutes to ensure they won’t release water into the tart. After that, we cut the mozzarella into suitable cubes, and the tomatoes, after washing, we slice into round pieces.

Once the dough has risen, we tear off a piece, making sure to leave less than half to spread in the pan. We line a tart pan with baking paper and sprinkle a little flour to prevent sticking. We place the dough in the pan and stretch it with our fingers, forming a small border around the edge. Using a fork, we prick the dough to prevent air bubbles from forming during baking.

We place the first layer of zucchini slices, followed by the mozzarella cubes and a little grated Parmesan, which will provide an intense flavor. We continue with another layer of zucchini, mozzarella, tomato slices, and the remaining Parmesan, and for extra flavor, we sprinkle a little pepper and rosemary. We place the tart in the preheated oven at a moderate temperature and let it bake until it is golden on top and the dough is well cooked.

When the tart is ready, we take it out of the oven and let it cool slightly so it can be cut without crumbling. We serve it with pleasure, savoring each delicious slice! Enjoy your meal!

 Ingredients: For the dough: 550 g flour, 25 g yeast, 100 g sour cream, 250 ml warm water, 3 tablespoons oil, 1 teaspoon sugar, a pinch of salt. For the filling: 2 small zucchinis, 300 g mozzarella, 5-6 tablespoons grated parmesan, 2 tomatoes, 1 teaspoon dried rosemary, pepper.
