Ingredients

*For the pastry
- 60-70 pcs. pișcoturi
- 600 ml brewed coffee
- Brown rum to taste
- Powdered sugar to taste

*For the cream:*
- 500 g mascarpone
- 750 ml well chilled sweet cream
- 500 g Margaritar sugar
- 6 whole eggs
- 20 g gelatine (sheet)

*For decoration:*
- Cocoa powder

Preparation

1. Prepare the tray: Start by preparing a 17 x 24 cm high-walled tray. It is important that the tray is deep enough to hold the delicious layers of tiramisu.

2. Making the coffee mixture: Pour the brewed coffee into a bowl and add the brown rum to taste. Add the powdered sugar and stir well until the sugar dissolves completely. This mixture will give the piquitos an intense aroma and add a hint of flavor.

3. Mounding the pieccot: Soak each pieccot in the coffee mixture for 2-3 seconds, then place them tightly next to each other at the base of the tray. Make sure they're well coated in the liquid, but don't leave them too long so they don't break down.

4. Making the custard: Next, bring water to a boil in a pot over medium heat. In another pot, mix the eggs with the crystal sugar. When the water comes to a boil, place the bowl with the egg mixture on top. Stirring constantly will heat the mixture. Make sure it reaches a spicy temperature, but don't let it boil!

5. Whipping the cream: While the egg mixture is heating, whip the cold cream until stiff. Once done, put it back in the fridge to stay cool and aerated.

6 Cool the egg mixture: Once the eggs have warmed up, take them off the heat and use a mixer to beat them on high speed until frothy and cool. This is the key to success: mix well or the cream will run!

7. Mixing the ingredients: Remove the cream from the fridge and, using gentle strokes, mix it with the mascarpone. Then gradually add the frothy egg custard, stirring gently so as not to lose air.

8. Prepare the gelatine: Soak the gelatine sheet in warm water for a few minutes. Once softened, melt the gelatine in a small saucepan at the lowest temperature, stirring constantly for 10-20 seconds.

9. Finishing the filling: Add the melted gelatine to the mascarpone and egg cream, stirring constantly to make a smooth mixture. You now have the perfect tiramisu filling.

10. To assemble the dessert: Pour half of the cream over the piececrusts in the tray and smooth evenly. Then place the rest of the piecrusts, which have also been soaked in the coffee mixture.

11. Last layer of cream: Pour the remaining cream on top and level with a spatula. Now it's time to transfer the dessert to the fridge, where it will chill for at least 4 hours to set.

12. Serving: Once chilled, you can cut the tiramisu with a damp knife to make nice portions. Sprinkle cocoa powder on top for an elegant look and intense flavor.

- If you like a more intense coffee flavor, you can add an extra amount of coffee to the pieccotch dip mix.
- Instead of rum, you can use amaretto or another favorite liqueur to change the flavors a bit.
