Soft dough with cheese and raisins
The dough for this delicious cake is the perfect base for a rich and flavorful filling. We start by melting the butter in a saucepan over low heat, being careful not to burn it. Once the butter has completely melted, we let it cool slightly. In a large bowl, we mix the eggs with the sugar until we obtain a fluffy and light-colored mixture. This will contribute to the cake's fluffy texture. We add the melted butter, continuously mixing to avoid cooking the eggs, then gradually incorporate the milk.
After the liquid ingredients are well combined, we sift the flour into another bowl, gradually adding the baking powder and salt. It is important to mix gently so that no lumps form. Finally, we add the vanilla essence, which will bring an enticing aroma to the dough. We knead everything until we obtain a homogeneous dough that does not stick to our hands. Once the dough is ready, we let it rest, covered with a clean towel, while we prepare the filling.
For the filling, we beat the eggs with the sugar until they become frothy, then we add the sour cream, which will provide a special creaminess. We continue by incorporating the vanilla and the grated lemon zest, which will give a fresh and invigorating taste. Finally, we add the crumbled cheese, gently mixing with a spatula to obtain a uniform cream, but with a slightly grainy texture, which will make the cake more interesting.
We break half of the dough and roll out a thin sheet, which we place in the prepared baking tray lined with parchment paper, measuring 24/37 cm. The sheet of dough should be slightly larger than the tray so that we can cover the edges as well. We prick it with a fork to prevent air bubbles from forming. We pour the cheese filling over the dough, leveling it with a spatula, and sprinkle the raisins for added sweetness and texture.
Then, we roll out the second sheet of dough, which we place on top of the filling, ensuring that we spread the sheet evenly. Like the first sheet, we prick it with a fork to allow steam to escape during baking. We place the tray in the preheated oven at medium temperature and let the cake bake for 25-30 minutes. It is important to check the baking status by opening the oven door, being careful not to leave it open too long. When the cake is evenly browned on top, we take it out and let it cool in the tray, then we portion it and serve with pleasure. Enjoy your meal!
