To prepare a delicious recipe of potatoes with vegetables and eggs, we start by making sure we have all the necessary ingredients at hand. We will use potatoes, carrots, onions, eggs, and lemon juice, all fresh and of good quality. We begin by peeling the potatoes and carrots, then cutting them into uniform cubes so they cook evenly. We place the potatoes and carrots in a large pot with cold water, add a little salt, and bring to a boil. It is important not to overcook them, just until they become tender, to preserve their texture and flavor. After about 15-20 minutes, we remove them from the water and let them cool.

Meanwhile, we prepare the mixture. In a large bowl, we crack the eggs and lightly beat them with a whisk, being careful not to incorporate too much air into the mixture. This will help achieve a fluffier texture. We add the freshly squeezed lemon juice, which will not only give a fresh taste but also help maintain the color of the vegetables. Next, we chop the onion finely and add it to the bowl. We mix all the ingredients well, then carefully fold in the cooked potatoes and carrots, being careful not to mash them.

Let’s not forget about the boiled eggs! We slice them thinly and add them to our mixture, gently stirring to distribute them evenly. Now it’s time to season the mixture with salt and pepper to taste. Our dish is becoming more and more appetizing!

We preheat the oven to 180-200 degrees Celsius. In an oven-safe dish, we pour about 2 tablespoons of oil and spread it on the bottom and sides of the dish to prevent sticking. Once the oven is heated, we carefully take out the dish and pour in the vegetable and egg mixture. We level it with a spatula to achieve an even surface.

We leave the dish in the oven for about an hour, checking from time to time if it is browning nicely on top. When it is ready, we take the dish out of the oven and let the preparation cool slightly before portioning it. We serve the dish warm, alongside a fresh vegetable salad and lemon slices for an extra touch of freshness. This dish is ideal for a hearty lunch or dinner. Enjoy your meal!

 Ingredients: 1/3 boiled eggs 2/3 raw eggs juice from one lemon salt, pepper from this base you can add what you like: vegetables, chicken breast In my recipe I added: 4 potatoes, 2 carrots, 1 green onion
