Potato Pie
To prepare this delicious potato, egg, and sausage pie, start by boiling the whole potatoes and the 10 eggs. It is important to choose medium-sized potatoes and ensure the eggs are fresh for the best results. Boil the potatoes in salted water until they are tender, and the eggs for about 10-12 minutes to achieve hard-boiled eggs. Once boiled, remove them from the water and let them cool. Once cooled, peel the potatoes and slice them. Do the same with the eggs, carefully cutting them into thicker slices.
Meanwhile, preheat the oven to 180 degrees Celsius. Prepare a baking tray by greasing it with oil to prevent sticking. Begin by placing half of the potatoes on the bottom of the tray, spreading them evenly. Lightly season with salt and pepper to enhance their flavor. Then, layer the slices of hard-boiled eggs over the potatoes, followed by the sausage slices, which add extra flavor and texture.
In a separate bowl, combine the sour cream with 200 grams of crumbled telemea cheese and the other 2 eggs you have left. Mix well until you obtain a homogeneous composition. Pour half of this mixture over the layer of sausages, ensuring even coverage. Then, place the remaining potatoes on top, completing the layers of the pie. Finally, pour the rest of the sour cream and telemea mixture on top to create a delicious and creamy crust.
Cover the tray with aluminum foil to retain moisture and help the pie bake evenly. Place the tray in the oven and let it bake for 30-40 minutes. After this time, remove the aluminum foil and sprinkle the remaining telemea on top. Let the pie stay in the oven for about 15 more minutes until it turns golden and nicely browned. Once ready, take the pie out of the oven and let it cool slightly before cutting it into portions and serving.
