Stuffed calamari
Ingredients: 10-12 frozen squid 2 pieces of green onion (or 1/2 dried onion) 1 clove of garlic parsley 3 anchovies (if they are salted, rinse off the salt and then chop finely) 1 egg 3 tablespoons breadcrumbs 6 tablespoons olive oil (can be replaced with sunflower oil) 1 glass of white wine 1 tomato (or a little concentrate) lemon juice salt, pepper
To prepare a delicious stuffed calamari recipe, start by cleaning the calamari. Carefully remove the beak and eyes, taking care not to tear their bodies. If you bought pre-cleaned calamari, it is enough to cut only the tentacles into small pieces. This step is crucial as the tentacles will be part of the filling.
After that, prepare the necessary ingredients for the filling. Finely chop the onion, garlic, and parsley, ensuring a uniform consistency. Also, the anchovies, which add a special flavor, should be finely chopped. In a large bowl, combine the chopped tentacles, one egg, onion, garlic, parsley, and anchovies. Then add 3 tablespoons of breadcrumbs, which will help bind the ingredients, and 3 tablespoons of oil to enhance the flavor. Don't forget to season with salt and pepper to taste.
To achieve a fine and homogeneous filling, place the mixture in a blender and process it for a few minutes. The composition should turn into a creamy paste that is easy to handle. Now, using a teaspoon, start filling the calamari with this mixture, being careful not to overload them. Finally, close each calamari with a toothpick, ensuring that the filling will not leak during cooking.
In a large frying pan, add 3 tablespoons of oil and heat it well. Place the calamari in the pan and lightly fry them on both sides until golden. Immediately after, pour white wine over them, letting it simmer over medium heat. Let them cook for 30-40 minutes, occasionally adding a little lemon juice to enhance the flavors. In the last 10 minutes of cooking, you can add a diced tomato or, if you prefer, a bit of tomato paste to enrich the sauce.
During the simmering, if you notice that the sauce becomes too thick, do not hesitate to add a little water to achieve a consistent liquid, perfect for serving alongside the calamari. Even if the filling spills a little from the calamari, do not worry; mix well with the resulting wine sauce to create a tasty dish.
