- 2 vials of rum essence

- 400 ml liquid cream (preferably with a fat content of 30% for better whipping)
- Raspberry jam or other tart preserves (for example, sour cherry or peach jam)
Preparation Steps
1. Making the base
Start by preheating the oven to 190°C. We will bake in small molds, so make sure you have them ready. If you’re using silicone molds, grease them lightly with oil. For metal molds, grease them with butter and dust with flour.
In a separate bowl, begin with the egg whites. Beat the egg whites with a pinch of salt until they form a stiff, glossy foam. This is the key step to achieving a fluffy base. Ensure that the bowl is clean and dry for the best results.
In another bowl, mix the egg yolks with sugar until you get a fine, pale foam. This is the perfect moment to add the flavorings. I prefer vanilla extract, but you can experiment with rum essence or even a bit of lemon zest for a fresh taste.

Meanwhile, prepare the syrup. In a saucepan, add the water and sugar, and bring to a boil. Stir continuously until the sugar is completely dissolved. Let it boil for a few minutes, then remove from heat and add the rum essence. Allow the syrup to cool slightly.
If you want to save time, you can use fruit or flower syrups that you already have at home. I tried it with elderflower syrup mixed with a bit of cold water, and it was delicious!
4. Assembling the savarins
Once the savarins have completely cooled, it’s time to soak them. Dip each savarin in the cooled syrup, making sure they absorb enough liquid without drowning.
After soaking the savarins, fill them with raspberry jam, which will add the perfect tart note. Then, whip the liquid cream until it becomes firm and top the savarins with it.
