A cheese and raisin pie is more than just a simple dessert; it is a memory of childhood, family meals, and moments of joy. This cheese pie recipe is easy to make, bringing a delicious flavor in every slice. With a golden crust and creamy filling, this dessert will surely become everyone's favorite. Let's get started!

Ingredients
*For the dough:*
- 550 g wheat flour
- 200 ml lukewarm milk
- 50 g margarine (or butter)
- 5 tablespoons sugar
- 2 packets vanilla sugar
- 3 tablespoons oil (sunflower or olive)
- 1 packet dry yeast
- 1 egg
- A pinch of salt

*For the filling:*
- 600 g sweet cheese (preferably cottage cheese or ricotta)
- 3 eggs
- 5 tablespoons sugar
- 2 packets vanilla sugar
- 1 vanilla essence
- 100 g raisins (or more, to taste)
- 50 ml warm water (to hydrate the raisins)
- 1 rum essence

*For brushing:*
- 2 egg yolks
- 2 tablespoons sweet milk

Step by Step: Making the Pie

1. Activating the yeast: In a small bowl, mix the yeast with 100 g of flour and set it aside. This will help activate the yeast and achieve a fluffy texture.

2. Preparing the milk and margarine: Gently heat the milk until it is lukewarm (not hot!). Melt the margarine (or butter) and let it cool slightly. It is important that the milk and margarine are not too hot, otherwise they will kill the yeast.

3. Hydrating the raisins: Place the raisins in a bowl with warm water and add the rum essence. Let them hydrate for 15-20 minutes. This step will make the raisins juicier and more flavorful.

4. Preparing the dough: In a large bowl, beat the egg, then add the oil, sugar, salt, vanilla sugar, and lukewarm milk. Mix the composition well. Gradually add the flour while stirring constantly to avoid lumps.

5. Incorporating the margarine: Gradually add the melted margarine to the dough, continuing to add flour and mix until you obtain a homogeneous and slightly sticky dough.

6. Kneading the dough: Knead the dough for about 5-10 minutes until it becomes elastic and smooth. If it is too sticky, add a little more flour.

7. Rising the dough: Place the dough in a bowl greased with a little oil, cover it with a clean towel, and let it rise in a warm place for 1.5 hours, or until it doubles in volume.

8. Preparing the filling: In a bowl, mash the sweet cheese with the sugar and eggs, add the vanilla sugar, vanilla essence, and the well-drained hydrated raisins. Mix everything until it becomes a homogeneous composition.

9. Forming the pie: Once the dough has risen, divide it into two equal parts. On a floured surface, roll out the first part of the dough into a thin sheet, large enough to cover the bottom of the pan. Place the sheet in the greased pan lined with baking paper.

10. Adding the filling: Spread the cheese filling evenly over the dough. Roll out the second sheet of dough and place it on top of the filling. Gently press the edges to seal them.

11. Finalizing the pie: Use a fork to poke the pie in several places, allowing air to escape during baking. Mix the egg yolks with the milk and brush the pie with this mixture for a golden and appetizing color.

12. Baking: Preheat the oven to 180°C. Bake the pie for 40 minutes or until it becomes golden and crispy. Check occasionally to ensure it does not burn.

13. Cooling and serving: Once baked, let the pie cool on a rack for 10-15 minutes. You can dust it with powdered sugar before serving for a special appearance. Cut into servings and enjoy it with a cup of tea or coffee.

Useful tips for a perfect result
- Buy fresh, quality cheese to achieve a delicious filling.
- If you prefer a more intense flavor, you can add a little lemon or orange zest to the filling.
- Replace raisins with dried cherries or berries for a fresher version.
- Make sure the oven temperature is correct, as each oven bakes differently.
- The pie can be stored in the refrigerator for a few days, but it is just as delicious served warm.
