Chocolate and Sour Cherry Cake: A Delightful Sweet Taste Experience
If you are looking for a dessert that impresses not only with its appearance but also with its taste, this chocolate and sour cherry cake is the perfect choice. With an elegant combination of rich chocolate and tart cherries, this dessert brings together sweet and sour, creating a memorable culinary experience. Although the original recipe was designed as a three-layer cake, I have adapted it to ensure a tall and delicious base, even in the face of challenges. So, let's get to work!
Preparation time: 30 minutes
Baking time: 40 minutes
Total time: 1 hour and 10 minutes
Number of servings: 12
Ingredients:
*For the base:*
- 10 eggs
- 280 g sugar
- 70 ml oil
- 50 ml water
- 50 g chocolate pudding (or cocoa)
- 180 g flour
- 1 teaspoon baking powder
*For the cream:*
- 3 whole eggs
- 100 g sugar
- 200 g butter (at room temperature)
- 150 g milk chocolate
- 300 g sweetened liquid cream
- 1 jar of sour cherries (approximately 400 g)
Preparing the base:
1. Preparing the ingredients: Make sure you have all the ingredients at hand. It is essential that the eggs and butter are at room temperature to help achieve an airy texture for the base. Preheat the oven to 150 degrees Celsius.
2. Mixing the dry ingredients: In a large bowl, mix the chocolate pudding (or cocoa), flour, and baking powder. This mixture will help achieve a fluffy consistency and prevent lumps in the batter.
3. Separating the eggs: Separate the egg whites from the yolks. It is essential that the bowl in which you will beat the egg whites is clean and dry to achieve a perfect foam.
4. Beating the egg whites: Using a mixer, beat the egg whites with 50 ml of water until they form stiff peaks. Gradually add the sugar, continuing to mix until the foam becomes shiny and firm.
5. Incorporating the yolks: In another bowl, mix the yolks with the oil. Add the yolk mixture to the egg white foam, gently folding with a wooden spatula or spoon to avoid losing air from the foam.
6. Adding the dry ingredients: Gradually fold in the flour and pudding mixture into the egg mixture, gently mixing from the bottom up.
7. Baking the base: Pour the batter into a greased and lined baking tray. Bake for about 40 minutes or until the base is firm to the touch and pulls away from the edges. Let it cool completely on a wire rack.
Preparing the cream:
1. Boiling the eggs: In a bowl, mix the eggs with the sugar. Place the bowl over a double boiler and stir continuously for 30-35 minutes until the mixture lightens in color and thickens.
2. Adding the chocolate: When the cream is ready, add the finely chopped chocolate and stir until completely melted.
3. Cooling the cream: Transfer the cream to a bowl and let it cool. When it is just warm, add the butter and mix until you obtain a homogeneous mixture.
4. Preparing the cherries: Remove the pits from the cherries and let them drain in a sieve. They will add a tart note and a delicious contrast to the cream.
Assembling the cake:
1. Cutting the bases: When the base has completely cooled, cut it into 2 or 3 layers, depending on your preferences.
2. Soaking the layers: Use syrup from the cherry compote to soak each layer, ensuring an intense flavor and moisture.
3. Assembly: Start with the first layer of the base, spread half of the chocolate cream on it, arrange the cherries on top, then add another layer of cream. Continue with the other layers, finishing with the remaining cream.
4. Decorating: You can decorate the cake with melted chocolate glaze or whipped cream, depending on your preferences.
5. Final cooling: Let the cake cool in the refrigerator for at least 2 hours before serving, allowing the flavors to blend perfectly.
Serving suggestions:
The chocolate and sour cherry cake is perfect served alongside a scoop of vanilla ice cream for a refreshing and creamy contrast. Additionally, a cup of coffee or a fragrant tea will perfectly complement the sweetness, creating an unforgettable culinary experience.
Helpful tips:
- Make sure all ingredients are at room temperature for a homogeneous mixture.
- You can experiment with different types of chocolate (dark, milk, or white) to create interesting variations.
- Substitute the sour cherries with other seasonal fruits, such as raspberries or strawberries, to adapt the recipe to your tastes.
Nutritional information:
This cake is rich in protein due to the eggs and butter, while chocolate brings beneficial antioxidants. It is important to note that, having a high sugar and fat content, it is recommended to consume in moderation, but it offers a sweet satisfaction that is worth it occasionally.
