Ingredients:
- 350 ml water
- 250 g margarine
- 200 g flour
- 7-8 eggs (depending on their size)
- 2 liters milk
- 5 packets of vanilla pudding (or any flavor you prefer)
- 500 g cooking chocolate
- 10 tablespoons cooking oil
- 200 ml liquid cream
Step 1: Preparing the Choux Pastry
Start by bringing the water and margarine to a boil. In a pot, combine 350 ml of water with 250 g of margarine and boil over medium heat, stirring constantly until the margarine is completely melted. It is important not to let the mixture boil for too long, as we want a perfect texture for the dough.
Step 2: Adding the Flour
Once the margarine has melted, add the 200 g of flour and mix vigorously with a spatula or wooden spoon. Continue to stir until the dough pulls away from the sides of the pot and forms a compact paste. This process should take about 2-3 minutes.
Step 3: Incorporating the Eggs
Remove the pot from the heat and let the dough cool for a few minutes. Then, add the eggs one at a time, mixing well after each addition. The dough will become shiny and elastic, and the consistency should be similar to that of a cake batter.
Step 4: Forming the Eclairs
Preheat the oven to 200°C. Using a spoon or a piping bag, form small strips of dough on a greased baking tray (or lined with parchment paper). Make sure to leave enough space between them, as they will puff up during baking. Bake for about 25-30 minutes, or until they turn golden and fluffy. Once cooled, cut the bottom of each eclair with a sharp knife. Use a piping bag to fill the eclairs with vanilla pudding. Then, dip each eclair in the melted chocolate, allowing the excess to drip off. Place the eclairs on a platter and let the glaze set.
