Ingredients

- a pinch of salt
- 1 cup flour

- 500 ml milk
- 5 tablespoons flour
- 200 g sugar
- 100 g butter
- 1 vanilla essence

For the glaze:
- 200 g milk chocolate (or a combination with dark chocolate, according to preference)

Preparation

Step 1: Preparing the eclair dough

1. In a saucepan, bring the water and oil to a boil. Let it boil until it starts bubbling. This is the base for your dough.

2. Once the water and oil are boiling, remove the saucepan from the heat and quickly add 1 cup of flour. Use a whisk to mix well and avoid lumps. The dough will become smooth in a few minutes.

3. Add the ammonia dissolved in a little vinegar and a pinch of salt to the mixture. Continue to mix well. Let the dough cool completely.

4. After the dough has cooled, add the eggs one by one, mixing vigorously with the whisk after each egg. It is important that each egg is well incorporated before adding the next. The dough should become elastic and shiny.

5. Preheat the oven to 200°C (or 180°C if using a fan oven). Prepare a baking tray lined with parchment paper.

6. Using a plastic bag (you can use a milk bag, as you mentioned), fill it with the dough. Cut a small corner to form a nozzle and shape the puffs on the prepared tray. You can make large eclairs or mini eclairs, depending on your preferences.

7. Bake the eclairs in the preheated oven for 25-30 minutes, or until they turn golden. Do not open the oven in the first 20 minutes, or they may collapse.

Step 2: Preparing the cream

1. In a saucepan, add 500 ml of milk and place it over medium heat. In a separate bowl, mix the flour with the sugar.

2. Once the milk starts boiling, add the flour and sugar mixture. Stir continuously with a whisk to avoid lumps. The cream will begin to thicken.

3. When the cream reaches the desired consistency, turn off the heat and add the butter and vanilla essence. Mix well until the butter completely melts and the cream becomes smooth.

4. If desired, you can add a few finely chopped strawberries to your cream, which will give a wonderful sweet-sour taste.

Step 3: Filling the eclairs

1. After the eclairs have completely cooled, use a knife to gently cut them on one side. This way, you will be able to fill the puffs with the delicious cream.

2. Use a spoon or a piping bag to fill each eclair with the cooled cream. Make sure not to overfill, to avoid the cream spilling out.

Step 4: Glazing the eclairs

1. Break the chocolate into cubes and melt it in a bain-marie. Make sure no water gets into the chocolate, or it will spoil.

2. Once melted, pour the chocolate over the filled eclairs. You can use a spatula to spread the chocolate evenly.

3. Let the glaze set for a few minutes before serving the eclairs.

- Ammonia is essential for achieving fluffy eclairs, as it helps the dough rise. Make sure to dissolve it well with vinegar to avoid an unpleasant taste.
