For the chocolate mousse:
- 2 eggs
- 50 g of sugar
- 150 g of milk chocolate
- 350 g of whipped cream
- 50 ml of liquid coffee
For the sour cherry cream:
- 150 g of whipped cream

- 100 ml of hot water
For the glaze:
- 100 ml of water
- 100 ml of liquid cream
- 100 g of sugar
- 30 g of cocoa
- 5 g of gelatin
Preparation:
Step 1: Preparing the sponge
1. Start by separating the egg whites from the yolks. In a large bowl, add the egg whites along with the 5 tablespoons of water. Using a mixer, beat the egg whites until you achieve a firm foam. Gradually add the sugar, continuing to beat until the mixture becomes glossy and firm.
2. Then incorporate the yolks, gently mixing with a spatula.
3. Sift the cocoa and flour over the mixture and gently fold in, using folding motions to avoid losing air from the sponge.
4. Preheat the oven to 150°C. Grease a 25 cm diameter cake pan and line it with parchment paper.
5. Pour the batter into the pan and bake the sponge for 20 minutes. Check with a toothpick if it is well baked. Once cooled, cut it into 3 equal layers.
Step 2: Preparing the chocolate mousse
1. In a bowl, beat the 2 eggs together with the sugar until they become a fluffy cream.
2. Melt the milk chocolate in a bain-marie or in the microwave, being careful not to burn it. Let it cool slightly.
3. In another bowl, whip the cream until firm. Add the melted chocolate and liquid coffee, gently mixing to combine all the ingredients.
Step 3: Preparing the sour cherry cream
1. Boil the sour cherries together with the sour cherry jam in a small saucepan for 5-7 minutes, until softened. Let them cool.
2. Whip the cream until firm and then add the sour cherry mixture, folding in carefully.
Step 4: Assembling the cake
1. Place a cake ring on a cake stand similar in size to the cut sponge.
2. Place the first layer of sponge, soak it with the syrup made from the sour cherry jam and hot water.
3. Add the sour cherry cream, then the second layer of sponge, which is soaked again.
4. Finally, pour the chocolate mousse and cover with the third layer of sponge. Refrigerate the cake for 2 hours to set.
Step 5: Preparing the glaze
1. In a small saucepan, combine the water, liquid cream, sugar, and cocoa. Mix well and bring to a boil, then let it boil for 5 minutes.
2. Dissolve the gelatin in a little cold water and add it to the hot glaze, mixing well.
3. Let the glaze cool slightly before pouring it over the cooled cake.
4. Refrigerate the cake again for another 2 hours.
Step 6: Decorating the cake
1. Once the glaze has set, remove the ring and transfer the cake to a serving platter.
2. You can decorate the cake with a few fresh sour cherries or chocolate shavings for an elegant look.
