The Base: Start by preparing the base, an essential element of your cake. Make sure the butter is at room temperature so that it mixes easily. Place the butter in a large bowl and add the powdered sugar. Use an electric mixer to combine the two ingredients until you achieve a fluffy and homogeneous foam. This will become the delicious base of your cake. In another bowl, beat the egg whites with a pinch of salt until they form a firm foam, which will add a light and airy texture. Using a spatula, gently fold the egg whites into the butter mixture, being careful not to deflate the air in the mixture.

Next, prepare the dry ingredient mixture. In a separate bowl, combine the ground nuts, cocoa powder, baking powder, and sifted flour. Sifting the flour is an important step to avoid lumps and achieve an even base. Add this mixture to the butter and egg white composition, mixing slowly to maintain the aeration of the egg whites. Finally, don’t forget to add the vanilla essence, which will give a sublime aroma to your bases. Prepare a 22/24 cm tray by lining it with baking paper. Pour the mixture into the tray and carefully level the surface so that the base bakes evenly. Place the tray in the preheated oven at the appropriate temperature and let the base bake for 20 minutes until it becomes firm and slightly elastic to the touch.

The Glaze: While the base is baking, you can prepare the glaze. In a clean bowl, mix the egg yolks with the powdered sugar until the mixture becomes light in color and creamy. This will add a sweet and elegant note to your cake. After 20 minutes of baking the base, remove the tray from the oven and pour the glaze over the still warm base, making sure to distribute it evenly over the entire surface. Then, reintroduce the cake into the oven and let it bake for another 10-12 minutes. When ready, and the base is slightly browned, take the cake out of the oven and grate chocolate on top for a delicious and elegant finish. Let it cool completely before slicing. You can serve the cake alongside a cup of coffee or tea, and each slice will be a true feast for the senses. Enjoy!

 Ingredients: For the dough: 5 egg whites, 200 g butter, 150 g powdered sugar, 200 g walnuts, 2 tablespoons cocoa, 60 g flour, 1 teaspoon baking powder, 2 teaspoons vanilla essence, a pinch of salt. For the glaze: 5 egg yolks, 100 g powdered sugar, 30 g milk chocolate.
