To prepare these delicious cherry cookies, start by gathering all the necessary ingredients: 200 g of soft butter, 150 g of sugar, 1 fresh egg, 1 teaspoon of vanilla extract, 200 g of dark chocolate, 300 g of flour, 1 teaspoon of ground cinnamon, a pinch of salt, and preserved or fresh cherries, depending on your preference.

In a large bowl, begin by creaming the butter together with the sugar, using a whisk or an electric mixer. Mix well until you achieve a fluffy and homogeneous cream, light yellow in color. It is important that the butter is at room temperature to facilitate this process. Once you have obtained the desired consistency, add the egg and vanilla extract, continuing to mix to perfectly incorporate them into the mixture.

After the egg is fully integrated, add the melted chocolate, which you can prepare either in a bain-marie or in the microwave, being careful not to burn it. Mix again until the chocolate is perfectly incorporated. Then, add the sifted flour, cinnamon, and a pinch of salt. Mix with a spatula or your hands until you obtain a homogeneous dough, but do not overmix to avoid making the mixture too heavy.

Once the dough is ready, wrap it in plastic wrap and refrigerate for 30 minutes, to firm up slightly and make it easier to shape. In the meantime, preheat the oven to 175°C (350°F), so it is ready when the dough is chilled.

After the resting time has passed, take the dough out of the refrigerator and form balls about 3 cm in diameter. Place them on a baking tray lined with parchment paper, leaving about 4 cm of space between them, as they will spread during baking. Use your finger to gently press in the center of each cookie, creating a dent where you will place a cherry. Once you finish shaping the cookies, place the tray in the preheated oven and bake for 15 minutes, or until the edges turn slightly golden.

After baking, let the cookies cool completely on a wire rack. For a delicious finish, you can decorate the cookies with powdered sugar glaze or melted white chocolate, according to your preference. These little delights will yield about 45 cookies, perfect to be enjoyed alongside a cup of tea or coffee, bringing a touch of joy in every bite.
