Cabbage Meatballs
Cabbage is a versatile and healthy ingredient, and the cabbage meatball recipe is not only delicious but also easy to prepare. We start by cleaning the cabbage, chopping it finely or grating it, depending on everyone's preference. Once we have achieved the right texture, we add salt to the cabbage and mix well. This will help release the juices, and the cabbage will become softer and more flavorful. We let the mixture rest for about 10-15 minutes, during which the cabbage will release water.
Meanwhile, we take care of the potato. It is grated on the small grater so that it easily integrates into the mixture. The potato brings a delicate texture to the meatballs and helps them bind better. After we finish grating the potato, we combine the two ingredients: cabbage and potato. It is important to squeeze the mixture well to eliminate any excess water, as this step is essential for getting crispy meatballs.
Once we have a uniform mixture, we add crushed garlic, freshly ground pepper, and fresh or dried dill, depending on what we have on hand. These flavors will give the dish a special taste. Finally, we incorporate a little flour, about two and a half tablespoons, to better bind the ingredients. It is important to mix well so that the flour is evenly distributed.
Now it is time to form the meatballs. With wet hands, we take a portion of the mixture and shape them into balls or squares, depending on preference. After we finish forming the meatballs, we roll them in flour, which will give them a crispy crust when frying.
In a deep, heated pan, we add enough oil to fry the meatballs. When the oil is hot, we carefully add the meatballs, being careful not to overcrowd them. We fry them on both sides until they become golden and crispy. Once ready, we remove them onto a paper towel to absorb the excess oil.
These cabbage meatballs are served hot, accompanied by fresh bread, and on fasting days, a flavorful ketchup will be an ideal partner. On the other hand, on days when we can enjoy dairy, a generous portion of sour cream will turn this dish into a delicacy. So, get ready to impress family and friends with these tasty meatballs, which will surely become a favorite at family meals!
