Cozonac with Turkish delight and chocolate

Ingredients:
- 600 g wheat flour
- 100 g butter, melted

- 26 g fresh yeast

Step by step for a perfect cozonac:
1. Preparing the dough: In a small bowl, dissolve the fresh yeast in the lukewarm milk. Make sure the milk is not hot, as excessive heat can kill the yeast. Add the sugar and mix well until completely dissolved.
2. Combining the ingredients: In a large bowl, beat the 3 eggs and add the grated orange zest, vanilla extract, and melted butter (but not hot). Pour the yeast mixture into this bowl and mix well.
3. Incorporating the flour: Sift the flour into another bowl and gradually add the wet mixture. Use a spatula or your hands to combine the ingredients. If the dough is too sticky, add a little flour at a time until you achieve a soft, smooth, and elastic dough that does not stick to your hands.
4. Fermentation: Cover the dough with a clean towel and let it rise in a warm place for about 30 minutes, or until it doubles in volume.

6. Rolling the dough: Roll each sheet of dough starting from one end, so that the filling is well wrapped. Pinch the ends of the rolls to prevent the filling from leaking out.
7. Second rise: Place the cozonaci in trays lined with baking paper or greased with butter. Let them rise for another 15 minutes. At this point, preheat the oven to 180°C.
8. Brushing and baking: Beat one egg and brush the surface of the cozonaci with it using a pastry brush. Sprinkle sugar on top for a sweet and crunchy finish. Bake the cozonaci in the preheated oven for 45 minutes or until golden and, when tapped, sound hollow.
