These aromatic mini cakes are ideal for any time of the day, whether you enjoy them at breakfast or serve them as a snack alongside a cup of tea or coffee. In just 20 minutes, you can indulge in a fresh and juicy dessert with an intense lemon flavor.
Preparation time: 10 minutes
Baking time: 15-20 minutes
Total time: 30 minutes
Number of servings: 12 muffins
Necessary ingredients:
- 3 large eggs
- 100 g granulated sugar (for egg whites)
- 50 g powdered sugar (for butter)
- 150 g soft butter (at room temperature)
- 60 g yogurt
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon grated lemon zest (preferably organic, for intense flavor)
- a pinch of salt
- 2 teaspoons baking powder
- 200 g flour
For decoration:
- powdered sugar
- lemon juice
- food coloring (optional)
Step by step:
1. Preparing the ingredients: Make sure all ingredients are at room temperature. This helps achieve a fluffier texture for the muffins. Separate the egg whites from the yolks and prepare a muffin tray with 12 molds, which you can grease with a little butter or line with paper liners.
2. Beating the egg whites: In a clean bowl, beat the egg whites with the granulated sugar until frothy and stiff peaks form. It’s essential that the bowl is completely dry and free of grease; otherwise, the egg whites won’t whip properly.
3. Mixing the wet ingredients: In another bowl, cream the soft butter with the powdered sugar until fluffy. Add the egg yolks, yogurt, lemon juice, and grated lemon zest, mixing well after each ingredient.
4. Combining the mixtures: Gently fold the beaten egg whites into the butter mixture using a spatula. Do this with gentle up-and-down motions to retain the air in the egg whites. This step is crucial for fluffy muffins.
5. Adding the dry ingredients: Sift the flour together with the baking powder and salt. Gradually add them to the wet mixture, stirring gently until combined. Be careful not to overmix, as this will develop the gluten in the flour, making the muffins denser.
6. Pouring the batter into molds: Use a piping bag to fill the muffin molds about two-thirds full. This allows the muffins to rise beautifully and evenly.
7. Baking: Preheat the oven to 180°C (moderate) and bake the muffins for 15-20 minutes until golden and passing the toothpick test (when inserted in the middle, it should come out clean).
8. Cooling and decorating: After baking, let the muffins cool in the tray for 5 minutes, then transfer them to a wire rack to cool completely. Prepare the glaze from powdered sugar mixed with a few drops of lemon juice. You can add food coloring for a more cheerful appearance. Decorate each muffin with the glaze obtained.
Serving suggestions: These lemon muffins are delicious both warm and cold. You can serve them with a cup of aromatic tea or freshly brewed coffee. Additionally, you can add some fresh berries or a spoonful of lemon jam for an extra flavor boost.
Possible variations: You can experiment with different flavors by adding a few drops of vanilla or almond extract to the butter mixture. You can also replace some of the flour with almond flour for a different texture and a more pronounced taste.
These lemon muffins are not only easy to make but also extremely versatile, perfectly adaptable to your preferences. Don't hesitate to try them and customize them to your taste!
