Chocolate cake
Chocolate cake with a special dedication
Do you know that moment when you want to celebrate someone dear, but distance separates you? Well, the chocolate cake I will present to you today is a perfect way to send good and sweet thoughts. It’s the ideal recipe to bring a smile to your wonderful sister Geni, who has just achieved an important dream. Even though we are far apart, this cake will make my heart feel close to her. Let’s get started!
Preparation time: 15 minutes
Baking time: 35-40 minutes
Total time: 55-60 minutes
Number of servings: 8-10
Ingredients:
For the cake:
- 1 3/4 cups all-purpose flour (approximately 360 g)
- 2 cups sugar (approximately 410 g, I used half powdered sugar and half regular sugar)
- 3/4 cup cocoa powder (approximately 75 g)
- 1 teaspoon baking powder
- 1 pinch of salt
- 1 cup yogurt (approximately 236 ml)
- 1/2 cup vegetable oil (approximately 118 ml)
- 2 large eggs or 3 small ones
- 1 teaspoon vanilla extract
- 1 cup black coffee (approximately 236 ml)
For the cream:
- 250 ml liquid cream
- 50 g chocolate pudding mix
- 1/2 cup fresh orange juice or milk
Instructions:
1. Preparing the ingredients: Start by gathering all the necessary ingredients. Make sure they are at room temperature, especially the eggs and yogurt, to achieve a smooth and fluffy mixture.
2. Mixing the dry ingredients: In a large bowl, sift the flour, cocoa powder, sugar, baking powder, and salt. This step is essential to avoid lumps and to achieve an even cake. Mix well with a spatula or whisk.
3. Mixing the wet ingredients: In another bowl, combine the yogurt, oil, eggs, vanilla extract, and black coffee. Whisk well with a whisk or mixer to achieve a homogeneous mixture. The coffee will add a deep chocolate flavor, so don’t skip it!
4. Combining the ingredients: Pour the liquid mixture over the dry ingredients. Mix with a spatula until no flour is visible. Do not overmix, or the cake will become dense.
5. Preparing the pan: Line a round cake pan with parchment paper or grease it well with butter and sprinkle a little flour. This step will make it easier to remove the cake after baking.
6. Baking: Preheat the oven to 175 degrees Celsius (375 degrees Fahrenheit). Pour the mixture into the pan and level the surface. Bake the cake for 35-40 minutes or until it passes the toothpick test. When inserted in the middle of the cake, if it comes out clean, it’s done!
7. Cooling: Once the cake is baked, let it cool in the pan for 10 minutes, then remove it to a wire rack to cool completely.
8. Preparing the cream: In a bowl, whip the liquid cream until it becomes firm. Add the chocolate pudding mix and the orange juice (or milk) and gently mix until you achieve a fluffy cream.
9. Assembling the cake: Once the cake has completely cooled, cut it in half or leave it whole, depending on your preference. Spread the chocolate cream on the first half, then place the other half on top. You can decorate the cake with grated chocolate on top for an appetizing look.
10. Serving: Cut the cake into slices and serve it with a glass of fresh orange juice or flavored coffee. It’s perfect for a special occasion or just to indulge yourself!
Helpful tips:
- You can add some dried fruits, nuts, or hazelnuts to the batter for added texture and flavor.
- If you want a taller cake, make two layers and fill them with cream in between.
- The cake keeps well in the fridge, covered, for a few days.
- If you want to impress your guests, you can add some fresh berries as decoration.
