I invite you to discover this delightful dish with me, step by step.

Preparation time: 20 minutes
Baking time: 30 minutes
Total time: 50 minutes
Servings: 8

Ingredients:
- 500 g plums (about 8-10 large plums)
- 100 g sugar
- 1 teaspoon ground cinnamon
- 4 egg whites
- 150 g powdered sugar
- 1 teaspoon vanilla extract
- 50 g butter (for greasing the pan)
- 100 g flour (optional, for a denser texture)

Preparation steps:

1. Start by preparing the plums. Wash them well, remove the pits, and cut them into quarters. Place the plums in a bowl and sprinkle with 100 g of sugar and cinnamon. Gently mix to coat them evenly and let them sit for 15 minutes to release their natural juices.

2. Preheat the oven to 180 degrees Celsius. Grease a tart pan with butter, making sure it is well coated to prevent sticking.

3. In a clean bowl, beat the egg whites with an electric mixer until you achieve a firm foam. Gradually add the powdered sugar and vanilla extract, continuing to mix until the mixture becomes glossy and firm, forming stiff peaks. This step is essential for achieving a fluffy and airy texture.

4. If you desire a denser texture, you can carefully fold in the sifted flour into the egg whites using a spatula, in a gentle folding motion. This will give a more consistent texture to your semitart.

5. Pour the egg white mixture into the prepared pan, smoothing it out with a spatula. Then, place the caramelized plums on top, gently pressing them into the mixture to integrate.

6. Bake the semitart in the preheated oven for 30 minutes, or until it becomes golden and slightly firm to the touch. It is important not to open the oven in the first 20 minutes, as this may cause the egg whites to deflate.

7. Once done, remove the semitart from the oven and let it cool in the pan for 10 minutes, then transfer it to a cooling rack.

Serving suggestion: You can serve the semitart warm or at room temperature, sprinkled with a little powdered sugar on top, alongside a scoop of vanilla ice cream or a dollop of cream. This combination will add a creamy note and enhance the flavors of the plums.

Possible variations: Instead of plums, you can try using other seasonal fruits, such as peaches or apples, which caramelize just as well. You can also experiment with different spices, adding a dash of nutmeg or cardamom for an even more interesting flavor.

This plum semitart is not only easy to prepare but also an excellent choice for a seasonal dessert. With each slice, you will bring a touch of joy and flavor into the lives of your loved ones!
