We clean the potatoes and carrot, making sure to remove any damaged or dirty parts. After cleaning them, we cut them into cubes suitable for boiling evenly. We bring water to a boil in a large pot, add a little salt, and then add the chopped vegetables. We boil the potatoes and carrot until they become soft, but not so much that they fall apart. When they are ready, we drain the water and let them cool a bit before mashing. It is important to achieve a smooth and homogeneous puree, so we can use a potato masher or a blender, depending on preferences.

Once we have the vegetable puree, we transfer it to a large bowl. Here, we add soy sauce, which will bring a delicious flavor and added moisture. Next, we incorporate an egg, which will help bind the mixture, and breadcrumbs, which will provide a crispy texture to the patties. We also add freshly chopped parsley and dill for extra flavor. Minced garlic will add an intense note, and seasoning with salt, pepper, oregano, and thyme will transform this mixture into a real delicacy. If you find that the mixture is too soft, feel free to add an extra tablespoon of breadcrumbs until you achieve the desired consistency.

As soon as the mixture is ready, we form the patties with wet hands to prevent sticking. We dust them with breadcrumbs on each side, ensuring they are evenly coated, which will contribute to a golden and crispy crust when cooked. In a pan greased with a few drops of oil, we fry or bake the patties over medium heat. It is recommended to cook them on both sides until they become brown and appetizing.

In the meantime, we can prepare the parsley salad, which will add freshness to this dish. We chop the parsley finely and mix it with a garlic sauce made with yogurt, which will provide a creamy and refreshing note. These patties are not only filling but also extremely tasty, demonstrating that it is possible to enjoy a delicious meal even without meat.
