In a large bowl, combine the flour with the sugar and mix well. Add the oil and, if desired, the chosen flavor, then start kneading the mixture with your hands until you obtain a homogeneous dough. It is important not to knead excessively, as this can make the cookies too hard. If you wish, you can also add some chopped nuts or raisins for extra flavor.

Once the dough is ready, shape small balls that you can gently flatten with your palm. Place them on a baking tray lined with parchment paper, leaving a little space between them, as they will slightly rise during baking. Preheat the oven to 180 degrees Celsius and bake the cookies for about 15-20 minutes or until they turn golden. Let them cool on a wire rack and enjoy their wonderful taste.
