Raffaello Cake - with Dehydrated Coconut
To prepare a delicious and fragrant cake, we start by preparing the necessary ingredients. In a large bowl, we will combine the eggs with the sugar, using a hand mixer on medium speed. We continue to mix these ingredients until the mixture becomes a fluffy cream and significantly increases in volume. This step is essential, as the air incorporated into the mixture will help achieve a light and airy cake. Once we achieve this consistency, we add the butter, which should be at room temperature and creamy. We continue to mix with the mixer until the butter is perfectly integrated into the mixture.
The next step consists of adding the milk. We pour the milk gradually, mixing constantly to obtain a uniform composition. Then, we start dealing with the dry ingredients. In another bowl, we need to mix the flour with the baking powder and, optionally, with a quantity of desiccated coconut. It is important to sift these ingredients through a sieve to ensure that there are no lumps and that all the ingredients combine well.
If you use vanilla baking powder, the aroma will be even more pleasant, but if you don’t have it, it’s not a problem. You can add a packet of vanilla sugar to the sugar mixture or boil the milk with a little vanilla, then let it cool. We then mix the flour with the baking powder and coconut into the butter, eggs, sugar, and milk cream using a spatula or a wooden spoon to achieve a homogeneous composition.
We prepare the baking tray by placing a sheet of baking paper, which we wet and wring out well, to fit perfectly on the bottom and sides of the tray. This technique will ensure that the cake will come off easily after baking. After pouring the mixture into the tray, we place it in a preheated oven at 190°C and let it bake for about 45-50 minutes, depending on the oven used. It is good to check the cake with a toothpick; if it comes out clean, the cake is ready.
After the cake has baked, we let it cool slightly before removing it from the tray, then placing it on a platter. For an elegant finish, we dust it with powdered sugar, and those who wish can also add a drizzle of melted white chocolate or a white Nutella sauce, which can turn the cake into a real delight. This simple and tasty recipe will bring joy to your tables, whether it is for a special occasion or simply a delicious treat for your loved ones.
Ingredients: 190g butter, 3 large eggs, 130g flour (for cakes), 100g desiccated coconut, 190g granulated sugar, 50ml milk, 1 packet of baking powder, vanilla, powdered sugar for decoration. I used a 24 cm diameter baking tray.
