Delicious Chocolate Wafer Recipe

I invite you to join me on this culinary journey where we will prepare a recipe for chocolate wafers together, a dessert that combines crunchy textures and creamy fillings, perfect for any special occasion or just to indulge your taste buds. This recipe is inspired by my friend Lía, to whom I am deeply grateful for the idea. I have added a few personal tweaks to make it even more delicious.

Preparation time: 30 minutes
Baking time: 20 minutes
Total time: 50 minutes (excluding cooling time)
Servings: 12 servings

Ingredients:

For the filling:
- 1 pack of wafers
- 400 g plain biscuits (preferably butter biscuits)
- 250 g butter, left at room temperature for an hour
- 100 g chocolate liqueur with cherries
- 1 essence of rum
- 100 g cocoa
- 200 ml milk
- 200 g ground nuts
- 300 g sugar

For the glaze:
- 200 g cooking chocolate
- 50 g butter
- 1 tablespoon liqueur
- 100 ml liquid cream

Preparation:

1. Preparing the Biscuits: Start by breaking the biscuits into small pieces. This doesn't have to be perfect, but the smaller they are, the better they will incorporate into the mixture. Use a food processor to grind them finely. If you don’t have a processor, you can put them in a bag and crush them with a rolling pin or the bottom of a jar.

2. Mixing the Wet Ingredients: In a saucepan, add the sugar, cocoa, and milk. Mix the ingredients well and place the saucepan over low heat. Stir constantly until the sugar completely dissolves. It is important not to let the mixture boil, just to warm it up.

3. Adding the Flavors: Once the sugar has melted, remove the saucepan from the heat and add the butter, chocolate liqueur, and rum essence. Mix well to obtain a homogeneous mixture.

4. Combining with the Biscuits: In a large bowl, combine the ground biscuits with the ground nuts. Pour the chocolate mixture over this blend and homogenize everything with a spatula until the biscuits and nuts are completely covered with the chocolate cream.

5. Assembling the Wafer: On a flat surface, place the first wafer. Use a spatula to spread a generous portion of chocolate cream over the wafer. Continue adding wafers and spreading cream, alternating until you finish all the wafers and cream. Finally, gently press down with your hands to ensure good cohesion between the layers.

6. Preparing the Glaze: In a saucepan, heat the liquid cream. When it starts to boil, add the cooking chocolate, butter, and liqueur. Stir constantly until the chocolate and butter are completely melted and you have a thicker chocolate syrup. Let it cool slightly.

7. Finishing the Dessert: Pour the chocolate syrup over the last wafer. Make sure it is evenly distributed for a nice coating.

8. Cooling: Cover the dessert with cling film and let it chill in the fridge overnight. This step is essential as it allows the flavors to meld and the wafers to become soft and delicious.

Serving and Suggestions:

When ready, cut the dessert into squares or rectangles, as preferred. You can serve it plain, or accompany it with a scoop of vanilla ice cream or fresh fruit sauce. A cup of coffee or a glass of sweet wine would add a touch of refinement to the moment!

Nutritional Information: Approximately 350 calories per serving, depending on portioning and ingredients used. This dessert contains nuts, which are an excellent source of omega-3 fatty acids, protein, and antioxidants.

Frequently Asked Questions:

1. Can I replace the biscuits with something else? Yes, you can experiment with cocoa biscuits or gluten-free biscuits for a version tailored to your needs.

2. What type of nuts can I use? Romanian walnuts are ideal, but you can also try almonds or hazelnuts for a different taste.

3. How can I improve the texture? If you want a finer texture, you can add a little more butter to the mixture.

Possible Variations:

For a more exotic flavor, you can add a few drops of orange or lemon essence to the chocolate cream. You can also use milk chocolate or white chocolate for the glaze to diversify the flavors.

This chocolate wafer recipe is not only easy to make but also a perfect way to impress your friends and family. I encourage you to try it and enjoy every moment of the cooking process!
